LOOKING for: Tartar sauce

Hi room. I am new here, today as a matter of fact. I have been reading for a while and decided to join in.

I have two questions...I need a good tartar sauce recipe and is there a spell check for this board as my spelling is really bad..LOL

No, there is no spell check. What browser do you use? If you use Internet Explorer, you can download a free SC..it's a very small program and it lets you right click words to run/start a
spellcheck. You could download the google toolbar..it comes with a spell check.

Tartar sauce is much like meatloaf and potato salad - people have very definite taste for their favorite and tend to shun all others. Myself, I like the savory dill type tartar sauce. It is a concoction more than a recipe, but I am happy to share it.

I use equal parts mayonnaise (not Miracle Whip) and sour cream. You can make a big or small batch. For this purpose, let's assume we are using one-half cup of each.

To that, add one tablespoon lemon juice, two tablespoons finely chopped fresh dillweed (dry works too, but cut it in half if you are using dried). I would put 3 shakes of Tabasco in this amount (in this amount, it won't produce heat - just tang). I also add a shaving of onion. Actually, it is more of a juicing. I run the knife over the onion so closely that I get more juice than actual onion. For this quantity, I would do that 2 or 3 times - it probably doesn't amount to even a whole teaspoon. Blend well.

Most important, make this up early enough that you can leave it sit in the fridge for at least a few hours. Let those tastes mingle. After you have made it once, you can alter proportions to suit yourself. I hope this is the type of tartar sauce you like. Carmellia

you might try playing around with the sauce from this recipe Gingered Shrimp Cakes 1 lb. large shrimp, cooked 4 scallions, sliced, green parts included 1 Tbsp freshly grated ginger Grated lemon zest from 1 lemon 2 Tbsp chopped fresh parsley 1/2 C fresh corn, cooked, cut off cob 1 lg egg 3 Tbsp mayonnaise 1/2 tsp hot pepper sauce 1/2 tsp salt Pinch of ground black pepper 1 1/2 C fresh bread crumbs or panko (divided) 2 Tbsp olive oil (or more, for frying) 1 Tbsp butter (with the oil, for frying) Coarsely chop shrimp in bowl. Add scallions, ginger, lemon zest, parsley and corn. Combine mayonnaise, egg, hot sauce, salt and pepper and fold into shrimp mixture. Add 1 Cup breadcrumbs and gently mix. Form into 4 patties and gently dredge in remaining 1/2 C breadcrumbs, adding more if necessary. Put on a plate, cover with plastic and refrigerate for at least 30 min and up to 4 hours. Heat oil and butter in large skillet over med-high heat. Saute cakes until cooked through and golden brown on both sides, adding more oil to skillet as needed, about 8 minutes. Chile Garlic Sauce To make Chile-garlic cream sauce, combine 2 Tbsp chile-garlic sauce ( from Asia aisle at supermarket) and juice of 1/2 lime with 1/2 cup sour cream or cream fraiche. Spoon about 3 Tbsp of sauce on each plate and place shrimp cake on it, serve immediately. Makes four servings. Variation: Substitute lump crab meat for the shrimp. Nancy

No Juniors here. Got this recipe from an internet friend recently and it was really good. I use various cheeses. My favorites are fontina, monterey jacks, cheddars (sharp especially for us), gouda, edam, gruyere, mozzarella, parmesan, romano, and provolone. I have melted asiago once and it came out okay too. The trick is to make your white sauce first and then add the cheese as the milk warms in small chunks or shred it. Stir contantly and don't whisk it, just easy stirs. Velvety sauce everytime is my experience. If you aren't making a sauce, or adding it to other ingredients, then almost anything will do I would think, but fresh cheeses like goat cheese can separate on you, I've had that happen once. Most cheese have a huge fat content and have salt. The fatter the cheese, usually the easier it melts I would think. We eat a LOT of cheese in our family, but we like it fresh cut or in a sauce best. Cheddar and mozzarella are the basic toppings for pizza or like tuna melts. Our favorite cheeses for macaroni and cheeses when I do it homemade is a mixture. I will do tomato sauces or white sauce based cheese sauces based on what tag ends of cheese, or cheese I need to use are in the fridge. Fontina is a favorite white cheese around here for melting. And, I think I forgot plain swiss in my list. But, baby swiss to nice ripe swiss cheese always tastes good mixed with beef. Try fontina cheese mixed in with ground veal, and don't forget to use feta cheese with lamb!!
