Comments (11)Hey Jessy! Give these a try. They draw raves every time I make them and you can fill them with almost anything! You might try a special salmon salad or a salmon Newbuerd type thing if you want it hot. Alexa ****************************************************** Herbed Profiteroles 8 tbsp unsalted butter 1 cup milk ½ tsp salt fresh ground pepper to taste 1 cup all-purpose flour 5 large eggs ½ tsp baking powder 1 tbsp assÂt chopped fresh herbs (basil, parsley, thyme, tarragon) Preheat the oven to 375. Line a baking sheet with parchment paper. In a small saucepan over high heat, combine the butter and milk and whisk until the butter has melted and the mixture has come to a boil. Stir in the S&P. Add the flour all at once and stir vigorously until the mixture comes away from the sides of the pan and forms a ball of dough. Remove from the hear and turn the mixture into the bowl of an electric mixer. Beat in the eggs, one at a time, until each is well incorporated. Add the baking powder and herbs and beat until the herbs are thoroughly distributed. Using a pastry bag without the tip, squeeze 16 generous golf-ball sized blobs of the dough onto the baking sheet. Bake until golden brown, smooth on the bottom and dry inside, for about 25 to 30 minutes. Comments (38)I just had a couple fish sandwiches made with fresh deep fried crappie, a slice of onion and home made tarter sauce. I threw together some tarter sauce that came out very nice. Couple dollops Hellman's mayo capers 15-20 or so smashed with fork fresh lemon juice sweet relish quick squirt of plain mustard few shakes Tony Chachere's S&P I thought the addition of mustard worked very well. Comments (6)Any way is fine with me: MARINATED SALMON SEARED IN PEPPER (serves 4) 1/4 cup soy sauce 2 clobes garlic, minced 3 TBL lemon juice 1 tsp grated lemon zest 1 tsp sugar Two 12 oz center-cut salmon fillets, skinned & halved 3 TBL coarsely cracked black pepper 1/4 cup olive oil Combine the soy sauce, garlic, lemon juice, lemon zest & sugar in a ziplock bag. Add the salmon; seal & refrigerate 1 hour, turning occasionally. Remove the salmon & pat dry; discard the marinade. Press pepper into each piece of salmon, coating thoroughly. Heat the oil in a skillet until hot but not smoking. saute the salmon 2-3 minutes per side until it flakes easily. Transfer salmon to paper towels; drain for 30 seconds & serve immediately.~~Seasational Seasons SALMON WITH GINGER BUTTER (serves 4) 3 TBL dry sherry 2 TBL soy sauce 1 TBL dark Asian sesame oil 1 TBL minced fresh gingerroot 2 TBL minced parsley 2 lbs salmon fillets 2 TBL butter, cut into small pieces 1/8 tsp each salt & pepper 1 lemon, cut into wedges Combine the sherry, soy sauce, sesame oil & ginger. Brush the fillets w/the sherry mixture & sprinkle w/parsley. Dot butter evenly across the surface. Season w/salt & pepper. This may be prepared to this point several hours ahead & refrigerated. Comments (10)Caramelized chopped onions, seasoned with worchestershire or a sweet white wine. Or add some heat to that chili sauce with a little red pepper. When I have done meat loaf for a funeral meal, I serve it in slices, but top some with a chunky tomato sauce I make out of canned diced tomatoes, chopped onion,celery and chicken broth, cooked until it's thick...bit of garlic.
