Contemplating a DIY counter top redo w/tile

I have never attempted anything this scale, but I feel confident that I could do it.

I guess what I"m lacking is the project organization skills. What to do first, what materials to have, how much time it will take, etc.

I currently have laminate countertops, so from my other post (on whether or not to tile over this) I've determined NOT to tile over, but to start over.

What do I need for a surface then?

Is there something special to use that will give the new tiled counter the same height as the old one?

are there links somewhere for some step by steps here on GW? I'll research the internet more too, just wanted to get a feel for how DOABLE this would be for me.

I do not have a tile saw, but I think I can get one and I'm reasonably comfortable attempting this. Armed with some good info/tips/instructions etc. And I'll be willing to give it a go. There are plenty of people (for hire and for free) who could bail me out if I get in over my head.
