Trixie, I made some just like this for the tech support kids at my ISP-they are so happy to get them and I get lots of compliments on them. I think they are great too so know what you mean about saving some out for your family. The kids think the three different chips make a great treat-they are good too with some raspberry chips included also. RL`

granjan--On the Good Eats show about making chocolate chip cookies, Alton uses melted butter in the one he calls "The Chewy." The recipe has some other things that set it apart from a standard chocolate chip recipe (bread flour, 1 egg and 1 egg yolk, mostly brown sugar), so I guess melting the butter does indeed help with making chewy cookies. I use the recipe all the time (got a batch chilling as I type) because we prefer chewy cookies. By the way, my mother's name is Jan. My children call her Gran.

I copied this recipe too as my kids love seeing those "cookie cakes" at the bakery, but we never buy them. Thanks Sheliajoyce! Last time i made cookies, I didn't feel like making individual ones, so I made a double batch and spread the dough into a 9X13 pan (lasagna pan). I had to cook about 10-12 minutes longer for the center to be done. Tasted like cookies, but texture of brownies. My husband who is not normally huge on sweets-LOVED them!

This is what I used to make at the restaurant where I worked: 1 cup butter 3/4 cup sugar (1 cup if using oatmeal instead of granola) 1 cup brown sugar 2 eggs 2-1/2 cups sifted A/P flour 1/2 tsp salt 1 tsp baking soda 2 cups granola (plain or with coconut) 1 cup chocolate chips Cream butter and sugars until light and fluffy; add eggs, and beat thoroughly. Sift flour with salt and soda. Stir into butter mixture, add granola and chocolate chips. Drop from a teaspoon about 2 inches apart on a greased cookie sheet. Bake at 375°F for 10 to 12 minutes, or until completely browned. Using granola instead instead of oats makes the cookies crunchy instead of soft, and so if you like crisp cookies, this is a good substitution. You can use oatmeal instead of granola, but you will have to use 1 cup of sugar instead of 3/4 cup. I would multiply this recipe by four or six when making it for the restaurant, and I mixed the dough in a Hobart machine. I also tended to add coconut if the granola did not have any. Granola with almonds is good in this also.
