trim/moulding

I need to pick out trim and moulding. My builder typically uses 4 1/4 base, 2 3/4 casing and 4 1/4 crown. I have 9 foot ceilings throughout main floor. I have a tray ceiling which runs length of great room/kitchen and another tray in MBR. The trays make those ceiling 10 foot. I have cherry cabinets. The 2 doors coming off great room to bedrooms will have a nonworking transom above (possibly stained glass). All trim will be white.

I am thinking that the 2 3/4 casing seems kind of skinny. Please make recommendations. Include pics if you can. Also, how would you recommend trimming the trays. They are straight trays. The one in MBR has 45 degree angles in corners.
