Signs of an 'Inferior' Slab of Granite???

A granite salesperson tried to tell me that "her" granite was a better quality than the slabs at another granite yard. She said they aren't all the same and that they aren't all installed the same either. The installation part makes sense to me, but are there really inferior grades of granite. If so, what should we look out for?

We want something like Delicatus White, which I understand is a bit fragile??? Do most stones have cracks, and if so is that a sign that we should not take that slab? Is it easy to identify fissures and cracks if they are there???

Any guidance would be greatly appreciated about what to look out for and what questions we should ask the fabricator and/or sales person. Thanks so much for sharing your experience and expertise!
