I have seen a backsplash done in peel and stick floor tile, and it actually looked great! This was in a home that was on the market in a higher end neighborhood.

I saw one once where they'd covered it in pennies. A little labor intensive, but you'd be able to remove and have all your money back! I've been unable to post photos recently, but will try. If it doesn't show, here's a link to a pic.

You could paint it. Or apply the wallpaper that looks like beadboard.

We were vising some old neighbors and I noticed that they had wallpapered their refrigerator - why? I don't have a clue. But you could easily wallpaper the backsplash and it would be thin enough that it wouldn't alter the outlets.

Now that I think of it - I'm not sure if it was wall paper or contact paper. I didn't have the nerve to ask.

When we staged the old house for resale, we put up a vinyl wallpaper that was dimensioned and looked like ceramic tile....a quick fix for sure.

I used paintable beadboard wallpaper - painted it with satin Aura paint and it looks pretty good, like real beadboard and no problem with the outlets!

Paint the tiles or use contact paper over the tiles. Neither will look perfect, but will be a good fix until you remodel.

Also take a look at this website. They used faux tin tiles to cover their tile backsplash.
