Using plywood to slope a shower pan? Off center drain a mistake?

2 questions...

I have a 3'x6' shower that will be hot mopped with tar (I'm in California). I want to know if anyone has any experience with sloping the pan with plywood instead of a mortar bed. I am not sure about the proper way to make the slope. The subfloor is a tongue and groove 2x6 with a few gaps left from the old shower drain.

After putting in the 4x6 I am using as a dam, I realized that my shower drain is off center about 2". I can't really move the damn I think because of fitting in a double gang elec. box next to the shower and my vanity. Has anyone seen something like this that is a little off center? Am I making a huge mistake by not moving the plumbing?
