Does anyone have a good recipe for "Hot Apple Cider"? Thank you. Diana55

60 oz apple juice
2-4 cinnamon sticks
1 vanilla bean
1 large orange, sliced (not peeled)
3-5 cloves

Put all in a saucepan & simmer on low for 2 hours.

Alcoholic or non-alcoholic?

For non-spiked, I would do about what adnama posted. Maybe with some ginger or allspice too depending on my mood.

I have been making hard cider for a couple of years now. First year I started fermentation in the carboy - and was getting the explosions. This year, I started fermentation in a large mouth 5 gallon tub. It came with a lid and a hole in which you put the bung and air lock. Use the champagne yeast, not brewer's yeast or baker's yeast as this will increase the alcohol content. Cider only takes about 2 weeks to get done - some people keep wine for 30 or 60 days. In the first few days, you'll see "head" and bubbles, you will also see the yeast in suspension. After a week, the bubbles will disappear but the yeast is still there. I tried drinking it - and it gave me a pretty bad hang over - the reason is that the organic products in suspension give off trace quantities of methanol. After a week more, the yeast will die and fall to bottom and the cider will clarify. You won't see the yeast in suspension. Now it's done and ready for bottling. I tried drinking it again - and no hangover. The taste is not quite cider - more like white wine. --- Regarding your question - you can add the sugar and the yeast. If the vinegar is not "strong" enough as a pickling agent - then the yeast will continue to ferment. If it is strong enough - then the yeast will not - which means it is a strong enough pickling agent. However, be sure to add champagne yeast - as that can tolerate the highest alcohol content and acidity - I believe around 18%. Also, you can just taste the vinegar and compare it to another product with a published acetic acid content of 5%. Is it more or less sour - if it is more sour - it should have higher vinegar concentration. It sounds to me like you vinegar is still oxidizing. You have to stir the vinegar and keep it open to air to allow oxygen to interact with the alcohol. If it is unstirred, in a large barrel it can take six months, with an automatic stirrer it could take a two or three weeks. The more surface area that is exposed to air and the frequent agitation will reduce the time to complete the process.

My grandmother use to make Apple Butter and Annie was kind enough to share her recipe for Apple butter last year. I had planned to use some of the apples off our two apple trees but never got around too it. Maybe this year. But like you Cindy, I've never had apple butter in a cake. But I have had apple butter cakes. Home Cookin Chapter: Recipes From Thibeault's Table Apple Butter ============ Apple Butter recipe Posted by annie1992 (My Page) on Mon, Jul 3, 06 at 1:22 This recipe is Grandma's and I won a blue ribbon the year I was 12 at the county fair using this recipe. Dad was prouder of that ribbon than he was when I finished college, I think. LOL I did change this recipe in one way. I bake it in the oven instead of standing at the stove stirring a boiling pot of apple butter. I can go do other things and I don't get all those little burns on my arm from the volcanos of boiling apple butter. I bake it in a big non-reactive roaster at about 250F. This takes 8-10 hours but the house will smell sooooo good. Stir it about once an hour. I've baked it hotter, but you have to be very careful that it doesn't overcook and taste caramelized. If you want it more quickly, turn it up to 350 for the first couple of hours, until the pulp starts to thicken, then turn it down to finish but watch it carefully. You can also do this in a crockpot, but again, watch carefully. Today's crockpots will overcook it quickly and you'll get that caramelized flavor. Grandma Powell's Apple Butter 6 lbs apples quartered (about 12 apples, I use MacIntosh) 2 quarts sweet apple cider 2 cups sugar 1/2 tsp cinnamon 1/2 tsp cloves Simmer apples in cider until tender, then put through a food mill or sieve. Measure 3 quarts of apple pulp and cook until mixture mounds on a spoon. Add sugar and spices (taste it, you can add more or less to make it the way you like it), cook stirring frequently until mixture is thick, about 1 hour. Watch carefully as the apple butter thickens so it doesn't stick and scorch. Pour hot into hot jars, add rings and lids. Process in a boiling water bath for 10 minutes for pints and quarts. Makes about 6 pints (depending on how juicy your apples are) This is a recipe that you HAVE to taste to get it right. The apples could be very sweet or extremely sour. If they are juicy, they'll cook down and make less but it will taste just as good. I regularly add more cloves because I love that flavor, and sometimes I add ginger. Occasionally I use half brown sugar. Oh, and I always reuse the cider, I either cook more apples in it and make a double batch of apple butter, or I strain it and make apple jelly. Incidentally, if you think you can use that much, you don't have to can it, it'll keep in the refrigerator for a week or two. It doesn't freeze well, though, it kind of "separates". Annie

APPLE CIDER DONUTS 3 Tbsp. sugar for preparing pans 2 cups all-purpose white flour 1 1/2 t. baking powder 1 1/2 t. baking soda 1/2 t. salt 2 t. ground cinnamon 1 large egg lightly beaten 2/3 cup packed brown sugar 1/2 cup apple butter 1/3 cup pure maple syrup 1/3 cup apple cider 1/3 cup nonfat plain yogurt 3 T. vegetable oil,preferably canola oil GLAZE 1/4 cups sifted powdered sugar 1 t. pure vanilla 1/4-1/3 cup pure maple syrup DONUTS Preheat oven to 400 degrees Coat molds of a mini-Bundt pan with nonstick cooking spray or oil. Sprinkle with sugar, shaking out excess. In a mixing bowl, whisk together flour, baking powder, baking soda, salt and cinnamon and set aside. In another bowl, whisk together egg, brown sugar, apple butter, maple syrup, cider, yogurt and oil. Add dry ingredients and stir just until moistened. Divide half the batter among the prepared molds, spooning about 2 generous tablespoonfuls of batter into each mold. BAKEfor 10 to 12 minutes, or until the tops spring back when touched lightly. Loosen edges and turn the cakes out onto a rack to cool. Clean the mini-Bundt pan, then re-coat it with oil and sugar. Repeat with the remaining batter. GLAZE In a bowl, combine confectioner's sugar and vanilla. Gradually whisk in enough maple syrup to make a coating consistency. For a crowd. . . In a large coffee maker put 1 bag of red hots (small cinnamon candy) in the coffee basket. Pour a gal. of apple cider in the coffee maker and turn it on. As the cider perks the candy melts. . . . so simple, delicious, and makes the house smell wonderful!

I love hot apple cider but do not like the way the cidar seems to coat the inside of my mouth. I did find a recipe some 20 years ago that I really like and make it every year.

Hot Cider

1 gallon apple cider
1-30 oz can of frozen lemonade concentrate
1-30 oz can of frozen orange juice concentrate
3 whole cinnamon sticks
1 tsp nutmeg
1 tsp whole cloves
1 tsp whole allspice

In a cheesecloth bag or tea ball, place spices.

Drop spice ball into 30-cup coffee maker or slow cooker.

Add juices and cidar.

Simmer for 20 minutes.

Serve Hot.

Spiced Tea:

Follow cider direction substituting 8 tea bags and 1 gallon water for 1 gallon apple cider.

I know you asked for recipe, but if you don't want to deal with mixing anything, Knudson has a spiced cider that is really good. And it's all natural with no added sugar. They only make it in the winter, so we stock up on it.

I just used the apple cider from the grocery store and added about 1/4 - 1/2 tsp pumpkin pie spice to a gallon of cider when I made it a few weeks ago for a cooking demonstration. Everyone loved it and it was really easy.

I believe the brand of apple cider was McCutheons, something like that.

To a 64 oz jug of cider, I add a cinnamon stick, 5 or 6 cloves, a piece of dry ginger root about the size of the last joint on my pinky finger and 4 or 5 all spice berries and a lemon sliced...
Simmer for about an hour and serve. I like to remove the lemon slices and replace with fresh as they look sort of bad after simmering.
I don't care for anything but coffee heated or made in one of those big ol' coffee makers with the spigot...I can always taste the old coffee oils.

I don't use a recipe either. Just pour some cider into my Lodge Apple pot, add a couple of cinnamon sticks and whatever other spices catch my fancy that day--whole cloves, or alspice, or some grated nutmeg. Maybe some orange or lemon slices and heat.

You can really make it however you like, with whatever spices you enjoy.

I always get raves on my hot spiced cider. I make it in the crockpot. I use a mix of cider and cranberry juice, and whole spices I get from Penzeys. The easiest is just stick cinnamon, but I use a slice of candied ginger, some orange pieces with cloves stuck in them, and some whole cardamom pods. Maybe some allspice berries too, if I can find them. I use maybe 1/3 cranberry to 2/3 cider.

To a gallon of cider I put in 3 cinnamon sticks (broken in half), 1 tsp brown sugar, the rind of a small orange, and 3 cloves. Heat to a simmer, stirring occasionally. If we want to "spice it up" we add a small amount of Calvidous, (sp?) to our mugs. NancyLouise

Here is my T & T recipe for Wassail, which I have made for years. Each year I am asked to make it and bring it to parties. Everyone always wants this recipe. It came from a Christmas Home Tour by a local City's Womens' Club that I attended back in the 1980's.

WASSAIL

1 gallon Apple Cider
3 cinnamon sticks broken up slightly
1 tsp Nutmeg
3 tsp Allspice
1/3 box brown sugar, or less, if desired
1 12 oz can Frozen Lemonade
1 12 oz can Frozen Pineapple or Pineapple/Orange Juice
1 to 2 cans (cans from frozen Lemonade) of water

combine all ingredients and heat.(Place cinnamon sticks and spices in a bag and drop into liquid so you don't have to strain mixture)

Float clove studded oranges in liquid. Also, oranges,thinly sliced make a nice presentation.

This can be cooked in a slow cooker, on top of stove, or in a coffeemaker.

I make this for Christmas Eve Services at church and triple the recipe (do not triple the frozen fruit. Leave it as shown)and use a 100 up coffeemaker that is seperately designated for Wassail only because it will leave a definite aftertaste in the coffeemaker.

This year at a party in my home I made this in a 7 quart slow cooker which really worked well.

Note: I have been using Sugar Twin Brown Sugar substitute so that Diabetics can drink this. I cannot tell the difference in the taste.

Mulled Cider

2 sticks cinnamon
Â½ tsp. ground nutmeg
1 tsp. whole cloves
Â¼ c. brown sugar
1 c. water
1 qt. apple cider

Combine cinnamon, nutmeg, cloves, sugar and water in 1-quart pot. Cook about 15 minutes at medium heat. Strain and add liquid to cider. Heat until steaming. Serve hot or chilled. Yield: 5-7 servings.
