to pex or not to pex, is the question to be answered?

I am gutting my bathroom. Copper plumbing (supply and drains) were installed in 1963. Should I remove and install new, leave alone, or replace with PEX? I saw some PEX at Home Depot (just got PEX products), and it looks pretty easy. I guess I could install a manifold in the basement, and run pex lines to the first floor gutted bathroom that has a sink/toilet/bathtub. Is this a waste, or should I just leave the existing copper alone? Someone said copper wears out from the inside and will eventually leak. Is this true? Naturally after hearing this, I am concerned after doing a tile job, having to tear out to find a leaky pipe. I was under the feeling, most contractors gutting bathroom just leave everything alone.
