Grout - sanded vs unsanded - varying joint size

Tomorrow my backsplash will be regrouted. Two days ago it was grouted for the first time, but I hated the color and they took it out immediately. I had told them I wanted unsanded grout, but they used sanded because of varying joint widths. Because of slight irregularities in the tiles' edges, the joints range from 1/16 to 1/8. It looks fine. They want to use sanded because of the wider joints.

I still have time to take a stand on this, if it's warranted. I understand why sanded might be better at 1/8, but unsure about the narrower joints.

Also, I have one sample board I made on Sunday and one the tile setter made on Monday. Both used Custom sanded grout. When I drag my fingernail across mine, it doesn't crumble, but on theirs it turns to sand. Does one additional day curing make that much difference? Could a total rube like me be a better mixer of grout?
