Suggestions needed: food for handicapped friend

My dear friend, fell, three weeks ago, as we were leaving health club, right in front of me. She's 81.

Broken shoulder! Can barely use that hand, as she can only lift it so far.

She fell again, Thursday week, on the other side, cracked ribs.

And that OTHER side, her hand is afflicted due to a stroke, previously, and she tends to squeeze everything to death with that crippled hand.

Thus, she's drinking lots of V8 juice to get her veggies.

She really can only eat finger foods, like FF's, chicken strips, etc. But she does not need to eat THAT kind of food until she's healed, hopefully!

I was thinking of making a batch of raisin bran muffins, which the batter will last for 6 weeks.

She is blessed, in that her DS, age 54, lives with her, and does everything. At least he can make up some muffins each morning when he chooses. And can help her eat.

She's a very independent person, but has to be dependent no matter how strong willed she is.

Does have Home-care three days a week for rehab, bathing, etc.

Cannot think of anything else, unless you guys can come up with something, that would be nutritious for her!!

I know carrot sticks, celery sticks, sliced apples, etc etc etc. Was thinking of appetizing warm foods.

Any ideas? And thanks!
