Brandy Alexander Pie

Since there are so many knowledgable people on this site, I thought maybe someone would have an answer as to why I have a problem with this recipe. The filling just won't become solid enough for a pie.

Here it is:

1 envelope unflavored gelatin

1/2 cup cold water

2/3 cup sugar, separated

1/8 tsp salt

3 eggs, separated

1/4 cup cognac or brandy

1/4 cup creme de cacao

2 cups heavy cream, whipped

1 9" graham cracker crust

chocolate curls for garnish

Sprinkle the gelatin over cold water in a saucepan. Add 1/3 cup sugar, the salt and the egg yolks. Stir to blend. Heat over low heat while stirring until gelatin dissolves and mixture thickens.* Do not boil. Remove from heat and stir in cognac and creme de cacao and chill in refrigerator until mixture starts to mound slightly. Beat egg whites until stiff, gradually beat in the remaining sugar and fold into thickened mixture. Pour into the prepared pie crust and chill several hours or overnight. Garnish with the remaining one cup of whipped cream and chocolate curls.

* This is where I have a problem with the mixture. It just doesn't want to thicken enough and I cook it a long time. After adding all the rest of the ingredients and putting them in the pie crust and chilling it, it's still too liquidy.

My sister made it and had the same problem.

It is delicious, though, when made right! Not very heathful, though..lol
