What kind of dark beer for chili recipe?

I decided to enter a chili cook-off at work and found a recipe on the internet that was rated 5 stars by dozens of readers. (Yes, I'm entering the contest with a chili that I've never tested!)

The recipe calls for a can of dark beer. Now I don't know anything at all about beer (and DH has been no help). What brand of dark beer would you put into chili?

A dark German Beer...not a "sweet" beer like a Porter.
Anchor Steam puts outs everal dark beers as do other brewerys.
I also suspect that the success of the recipe depends to a large part on the beer you use.

I would use Guinness. Also Murphys makes a dark beer too. Those are my DH's favorites.

Red chilis like cayenne that are dried and then ground to powder. Here's one recipe but you'll find many others on the internet too. Check out the Hot Peppers forum here for many other recipes for chili powder too. Homemade Chili Powder Ingredients * 6 dried red peppers * 6 dried arbol chili peppers * 3 dried chipotle chilies * 1 1/2 tbsp. cumin seeds * 1 tbsp. garlic powder * 2 tbsp. oregano Alter the Chili Powder Spiciness This recipe is going to get us a very hot chili powder, so if you'd like something milder replace the red chili peppers with the ancho or mulato chili peppers. And remember to wash your hands after handling the peppers because they are very hot and if you get them in your eyes or mouth it will really hurt. Prepare the Chili Peppers First you'll need to prepare the peppers. Do this by cutting off the stem, slicing the peppers in half, and scraping out all of the seeds. You'll want to remove the seeds and stems because they are the spiciest parts of the pepper, and they won't grind very well. Toast the Chili Seasoning Now toast the cumin and the pepper in a pan on low heat for about 5 minutes. Let everything cool completely after 5 minutes for 1 minute. Grind the Chili Powder Now put the roasted ingredients, the garlic powder, and oregano in a spice mill or blender and grind the ingredients together until they form a fine powder. The worst part about making chili, real fire house chili, is cook'n up those beans. I prefer black beens or dark kidneys as they don't get as mushy as those lighter beans that they make refried beans from. Lentils are a favorable substitute that I have done before. Anyhow, you typically have to start by soaking the beans, to both rinse them and get them started taking on water. Boil the water and let soak again over night. This could go on for about 2 to 3 days to get things done. Stir often to keep the thick bean broth generated from burning to the bottom of whatever your cook'n the beans in. Don't cook overnight, just let sit. You don't need midnight surprises that the fire department actually needs to come out and give you tips on your firehouse chili for. Don't pour off that brown water, its gonna contribute to the sauce! My ingredient list is simply added after the beans are done cook'n. They include ... Roma Tomatos They are thicker and meatier Aneheim Chilis Hot, but not overwhelming. Sorrano Chilis Hot and zingy. Habneros ( If you really want firehouse flavor ) Onions and lots of 'em. Paprika Chili Powder Cinnamon Not necessary, but you can experiment Cilantro Some people like to add some form of sugar, like molasses, etc., but I don't. Here are some tips ... 1.) Cut up Tomatoes, Onions and Peppers so they form long strips. Don't dice 'em. 2.) Go find some real earthy chili powder. New Mexico and California have some really nice varieties that range from a ocre red to more brownish and they have flavor that'll make your chili ... chili! 3.) Where's the beef? Oh, I don't put it in mine. But when I do, I like to do what I do with spaghetti sauce and add both beef and pork. Cut up something like stewing beef strips and center cut pork chops. 4.) My old friend balsamic vinegar can add an interesting change to your chili. 5.) OK so you don't like reall hard core chili - eh? Well, don't use the habneros and add celery to mellow things out. Use less chili powder. 6.) If your chili is really thick, make sure you drink alot. You can either thin it down before hand or afterwards ... it's your choice.

This is my favourite basic chili recipe. I just use this recipe as an outline and every time I make it is is slightly different depending on what peppers I have on hand. Sometimes I use ground beef, and sometimes I use round/sirloin steak or pork cut into cubes. I use different beans. Black beans, pinto beans, kidney beans or chili beans. And I always serve it topped with cheese and homemade salsa with homemade tortillas on the side. Home Cookin Chapter: Recipes From Thibeault's Table Chili - Tex- Mex Seven Pepper Chili =================================== ================== 3 lbs. lean stew meat-beef, , ground coarse or in Â½-inch cubes 1 lb. pork loin, ground coarse or cubed 2 tbsp. pure lard or shortening 3 large yellow onions, chopped fine 2 stalks of celery chopped 2 tsp. cumin seeds 1 tsp. ground cumin 7 cloves garlic 1 to 3 Tablespoons( or more to taste) of ground chilis. Use a variety of different ones, i.e Chiles pasillas, equines, chile anchos, dried New Mexico Chilis, etc.. 1 tsp. Tabasco sauce 2 tsp. salt 5 jalapenos, fresh, seeded 3 cans tomatoes, 1 can beer (Mexican if you have it) l-oz. square unsweetened chocolate (Or Mexican chocolate) 2 cups Beef Broth Dried Pinto, black beans or kidney beans or canned. . . Brown meat in fat until no longer pink. Add onions and and celery and cook until clear. Combine in food processor or blender the cumin, garlic, and all of the different chilies., Tabasco, salt, jalapenos, and I can of tomatoes. Blend and set aside to steep. Add this mixture to the meat along with the two cans of tomatoes, the beer, broth and chocolate. Turn fire down real low and simmer least 2 hours. If using dried beans add them now. Stir occasionally to keep it from sticking. If the meat you have used is lean, you will probably have no fat to skim off, but if there is fat floating on the top, skim. I don't use a recipe for chili, normally. It's one of those "seat of the pants" kind of meals! I am surprised no one has posted Karen's chili recipe, tho. I really like it, but have to cut back a bit on the chili powders for Tim's sake and I also like to add beans. The beef does get very tender in this recipe. Beef Chili with Ancho, Mole, and Cumin (Posted by Riverrat) 8 servings. Chili: 1 tablespoon cumin seeds 4 bacon slices, chopped 1 4-pound boneless chuck roast, trimmed, cut into 1/2- to 3/4-inch cubes 1 large onion, chopped (about 2 cups) 4 (or more) large garlic cloves, chopped 3 1/2 cups (or more) beef broth, divided 1/4 cup pure ancho chili powder 1/4 cup Texas-style chili powder blend (such as Gebhardt) 1 tablespoon mole paste 2 teaspoons (or more) salt 2 teaspoons apple cider vinegar 1 1/2teaspoons dried oregano, crumbled 1 to 2 tablespoons masa (corn tortilla mix) 1/4 teaspoon cayenne pepper (optional) Garnishes: Warm, freshly cooked or drained canned black beans Chopped white, red, and/or green onions Grated cheddar cheese, Monterey Jack cheese, or queso fresco Sliced fresh or pickled jalapeÃ±o chiles Sour cream Tortilla chips or oyster crackers Toast cumin seeds in heavy small skillet over medium heat until fragrant, stirring often, 4 to 5 minutes. Cool; grind finely in spice mill or in mortar with pestle. SautÃ© bacon in large pot over medium-high heat until brown and crisp. Using slotted spoon, transfer bacon to large bowl. Sprinkle beef with salt and pepper. Working in 4 batches, sautÃ© beef in drippings in pot until browned, about 5 minutes per batch. Transfer beef and most drippings to bowl with bacon. Add onion and garlic to pot. SautÃ© until onion begins to brown, about 5 minutes. Add 1/2 cup broth to pot. Bring to a boil, scraping up browned bits. Return beef, bacon, and any accumulated juices to pot. Mix in ancho chili powder, Texas-style chili powder, mole paste, 2 teaspoons salt, vinegar, oregano, and cumin seeds. Add 3 cups broth; bring to a boil. Reduce heat to very low and simmer gently uncovered until beef is very tender, stirring occasionally and adding more broth by 1/2 cupfuls if chili is dry, about 2 1/2 hours or more. Mix in masa by teaspoonfuls to thicken chili or add more broth by 1/4 cupfuls to thin. Season chili with salt, pepper, and cayenne, if desired. (Can be made 3 days ahead. Cool 1 hour. Negro Modelo. It's a Mexican dark beer (the one with the gold label) that's flavor is deep enough to be perfect both in and with chili. Failing that, McSorley's ale. I'd be afraid that Guinness or Murphy's would have too much flavor for chili (though 've got a recipe for Guinness stout spice cake that will knock your socks off).

Linda - Thanks! I'll stay away from the sweet Porters.

Clare - What kind of Guinness or Murphys? Is a stout considered a dark beer? What about draught?
(Sorry I'm such a dummy!) I suppose I could go to a beer distributor and ask these same questions but I only have time to stop at the supermarket.

I would use Samuel Adams either Boston Lager, Oktoberfest or Winter Lager. Guiness would also be a good choice I usually make stew with Samuel Adams Lager. The lager is technically not a dark beer but it is full bodied. Good luck with the contest.

I was just researching chili recipes myself and emeril suggests Lone Star or Shiners Bock.

Stout is a dark ale. Any of those brews suggested would probably do just fine; just avoid the overly sweet, malty ones like Newcastle. Guinness has an almost coffee-like roasty flavor which might overpower the rest of the chili. But if the chili is fairly robust and spicy, that might work just fine.

Many microbrews are highly hopped, which I like for consumption but might give some odd flavors in chili.

I do cook with beer & I drink beer - I admit it! No on the Guinness for chili - too heavy (although I have a great recipe for a Guinness beef stew) and yes on the Negro Modelo as suggested by sigh. I also use it to cook mussels. You may be able to buy 1 bottle, but then you won't have any to drink while you cook the chili. Good luck on your cook - off !

Thanks everybody! I was able to get to the beer distributor and picked up a 6pack of Negro Modelo. The gentleman behind the counter agreed that it was a good choice for chili. But I'm not sure he speaks English. :-)

I'll let you know what happens during the cook-off!

Good luck, Starpooh! I love Negro Modelo, it's one of my favorite "secret" beers, plus it's not as expensive as some of the others.

Negro Modelo for mussels? Oh my! I'll bet that's tasty.

Guinness is great for stews (and for spice cake) but not for Chili. And Muphy's is best if you're making stout ice cream (yes I occasionally do the all beer dinner for my better half).

I have a few bottles of Negro Modelo in the cupboard. I use them in chili and I toss a splash in my salsa. :)

Good news and bad news...

The Negro Modelo was perfect for the chili! DH loved it and I was really psyched for a win.

But.... didn't even come close to winning. I had hoped the beer would give me an advantage (recipe also called for strong coffee, too!) but it seems the "guys" at work are not very discriminating. The winner was the hottest chili (I don't like super spicy so my chili was a bit tame). And my officemate did an interesting experiment; her entry was Bush's Best Homestyle Chili that she purchased at Walmart and popped into a crockpot. Guess what? She took 3x as many votes as my chili (although she didn't win).
Go figure.

Think I'll stick to the Christmas Cookie Contest instead.

Starpooh, I guess that's a commentary on the judges and not the cook. I'm sure there would have been much different results had your recipe been judged by...say the Cooking Forum! I would obsess over recipes then slave over covered dishes to bring to the office only to see the pigs in a blanket devoured.

BTW-Negro Modelo is what I use in my Caribbean Chili.
