Feel Silly Asking, But......re Homemade Dinner Rolls

I posted a thread requesting recipes for dinner rolls & would like to try several that were offered over the next couple weeks. Even though (if they turn out well)I'll run some over to my parents & DD's family, that's still more rolls than we need. I don't have freezer room to keep them.

So, my question is for those recipes that call for making the dough in a bread machine, could the amounts be halved and still turn out okay using the machine?

I have a mini-Zo and have, as yet, only used recipes made specifically for it. I'm pretty green as far as bread machine use goes.

Posting a new thread since I'm thinking those who've already been kind enough to offer recipes may not still be following the old one.

I posted a recipe/picture on your other thread for potato rolls made in a bread machine. I gave the recipe for 2 lbs. of dough that makes 24 rolls. I JUST RE-READ MY POST & I MADE AN INGREDIENT TYPING MISTAKE.

In case you might be interested in this recipe here's the measurements for 1 lb. of dough (12 rolls); 1-1/2 lbs. of dough (18 rolls); & the corrected version for 2 lbs. (24 rolls).

I've given the shaping & baking instructions only once below the 2 lbs. ingredient listing.

I'll list the ingredients in the order they go into my machine.

Potato Dinner Rolls - 2 lbs. of dough (24 rolls):

1-1/2 Cups Warm Water
2 Eggs, Slightly Beaten & Preferably at Room Temp
3 Tablespoons Olive Oil
3 Tablespoons Sugar
2 Teaspoons Salt
1/4 Cup Dry Milk Powder
1/2 Cup Dry Potato Flakes
4 Cups Bread Flour
2 Teaspoons Instant Yeast

Set bread machine on "Dough" cycle. After the first rise, remove dough from machine & place it on a lightly floured work surface. Cover & let rest for 10 minutes. Shape into 24 rolls & place on baking pan about 2" apart. Cover with tea towel & allow to raise for about 30 minutes. Brush tops with melted butter & bake in a preheated 375 degrees oven for 18-21 minutes. Take a peak at 18 minutes because everybody's oven is slightly different

Potato Dinner Rolls - 1-1/2 lbs. of dough

2 Eggs, slightly beaten
1-1/4 Cups Warm Water
Olive Oil - 2 Tablespoons
Sugar - 2 Tablespoons
1-1/2 Teaspoons Salt
3 Tablespoons Dry Milk Powder
1/3 Cup Dry Potato Flakes
3 Cups Bread Flour
2 Teaspoons Instant Yeast

Potato Dinner Rolls - 1 lb. of dough (12 Rolls)

1 Egg, Slightly Beaten & Preferably at Room Temp
3/4 Cup + 2 Tablespoons Warm Water
1 Tablespoon Olive Oil
4 Teaspoons Sugar
1 Teaspoon Salt
2 Tablespoons Dry Milk Powder
1/4 Cup Dry Potato Flakes
2 Cups Bread Flour
1-1/2 Teaspoons Instant Yeast

I would many times over rather receive a homemade food gift than any widget. I always need to eat, my friends always need to eat, but hardly ever truly need a widget :-) My next-door-neighbor sends a plate of Xmas cookies over every year, and although I don't really do sweets, my visitors always eat them right up. I would never think of a homemade food gift as cheap. Ingredients are $$$$! I also think the folks who give homemade gifts are enjoying themselves creating the gift, as opposed to the stressed-out-shopper trying to find a perfect widget (in my case, the perfect widget would be a 2.5 carat diamond, so if anyone wants to give me THAT...well, SURE!) And for those who don't like to bake, a pound of coffee or a nice container of tea would be such a nice gift... One year, I didn't know what to get my brother, so I made him a Bloody Mary basket. Everything he needed to create his favorite drink, with different mixes and olives...it wasn't cheap, but it sure seemed to be his favorite present that year :-) A previous coworker grew and canned her own pickles, and a jar of these pickles was coveted by every member of the office every holiday season. Wish I still could get some of those... If I ever start canning, which I always say I am going to do, I will be so happy to give away my jars of treats to people. Joanna

Lovely pics everyone. Kathleen that was Great Expectations by Charles Dickens and I think you have a decade or so to go before yours gets close to being bad. Smiles. It's lovely. There ya go Robin. When you're stressed give a caramel squirt. Well after reading Bizzo's meatloaf thread for the past few days I had to make one. Christy is another one of those who likes meatballs and hamburgers but not meatloaf. Okkkk.. especially since I've even made the meatloaf just like my meatballs to see if it made a difference. Nope. LOL. So tonight I made meatloaf and put in some salsa as many have mentioned. I still used a nice hunk of old italian bread soaked in milk. I even used some parmessian. I made her 8 meatballs in a pie plate and shaped the rest into a meatloaf for me. She loved her balls. I enjoyed the meatloaf too. Now I know what to do when I want meatloaf, just make hers into meatballs. I am really looking forward to meatloaf sandwiches for the next few days. Thanks Bizzo. Smiles.

Fun family Annie! I need to try ann_t's meat tort. I say that every year but it is on my list. We had some failures. Christmas day was dysfunctional family day. No one told me family was waiting...when we walked in and trying to settle after a long drive...yikes. I was hounded trying to un-pack...did not know so many people were there. And a sit down dinner was waiting. I had prepped so many sides but this and that niece and nephew had to eat by 5 and sister wanted all to be perfect...they started digging into my cheese and treat platters before i could pee. Horrible meal. I gave up and had a glass of wine. I had 6 cheeses and olives and ghost pepper salami and salmon charcuterie all prepped to platter but they dove into the containers before i could plate them...savages. My homemade flatbread was still in the truck yet to be unloaded. : ) (thought it was to be a quiet evening with my parents)...prep and eat around 7. My mother, now 86, tried to make a traditional turkey meal but it was so unnecessary. She cooks blonde. (not hair). Just safe and under done. The turkey was started 5am like the ye-olden days, Dressing bland and not baked fully, gravy white and floury. Sweet potatoes boiled in water to death. She stressed knowing i was on my way not knowing family showed up and waiting...(my sister that does not cook and expected miracles). The turkey sat 3 hours covered. How do they not know safe temp as i have taught them for years!? . I had all the fixings prepped to go into the oven but they were done well after all the family left. (did not know the extra family were even to be there). Family that does not cook and thinks those of us that do should provide for all. Grrr. "Almost forgot- Christmas apps were amazing! Crab cakes, mini lobster quesadillas, shaved filet mignon crostini and mini sliders." Yum! We had better successes the following days. : ) The best oyster stew ever. Finally perfected that one. Then oyster fritters for breakfast this morning...

Thanks, lascatx! I'll try it using milk if I don't go to the store sooner. I used to make loaf bread once a week when I was younger, then bought a bread machine which I don't use too often anymore. Rolls are one thing I've never made. Cawaps, if your kitchen is cold, preheat the oven to it's lowest setting, around 150 degrees. Open the oven door for about 15 seconds to let some of the heat out, put a dishtowel on top of the dough and let rise for however long it's supposed to rise. Repeat if you need to let the dough rise again, but put a tad bit of oil on top to keep from drying out. Question. My oven has 4 racks and most recipes call for the center rack. The 2nd rack looks too high, the 3rd rack looks to low, plus it's closer to the reheating element. I only use the lower rack to crisp up a pizza. Which is best for bread products?

tricia - Thank you for posting all the above! I will give them a trial run using the 1 lb. recipe. It's great to have the other sizes for cooking for a crowd.

amck, I bought the Princess a small bread machine at goodwill. We've done half batches of several recipes with no problems.

As always, I check the hydration of the dough a bit into the knead cycle, sometimes I need more liquid, sometimes more flour, just like with a full recipe.

Thanks, Annie. I'm such a relative novice at yeast bread making that I haven't acquired the instincts to just know this stuff. Also, I know my electric pressure cooker needs a certain ratio of liquid/solids to work properly, and I didn't know if there might be an issue w/ too little of something with the breadmaker.

I was impatient to start my roll making, so I went to the source of my machine and called the King Arthur Hotline yesterday afternoon. They said it should be fine to halve those recipes, so I gave it a try with great results.

I'm doing all this testing now so I don't have disappointing results on Thanksgiving Day. I keep reminding myself that it's only rolls....but I'm always a little nervous when I try something new that I'll be serving company.
