Feel Silly Asking, But......re Homemade Dinner Rolls

I posted a thread requesting recipes for dinner rolls & would like to try several that were offered over the next couple weeks. Even though (if they turn out well)I'll run some over to my parents & DD's family, that's still more rolls than we need. I don't have freezer room to keep them.

So, my question is for those recipes that call for making the dough in a bread machine, could the amounts be halved and still turn out okay using the machine?

I have a mini-Zo and have, as yet, only used recipes made specifically for it. I'm pretty green as far as bread machine use goes.

Posting a new thread since I'm thinking those who've already been kind enough to offer recipes may not still be following the old one.

I posted a recipe/picture on your other thread for potato rolls made in a bread machine. I gave the recipe for 2 lbs. of dough that makes 24 rolls. I JUST RE-READ MY POST & I MADE AN INGREDIENT TYPING MISTAKE.

In case you might be interested in this recipe here's the measurements for 1 lb. of dough (12 rolls); 1-1/2 lbs. of dough (18 rolls); & the corrected version for 2 lbs. (24 rolls).

I've given the shaping & baking instructions only once below the 2 lbs. ingredient listing.

I'll list the ingredients in the order they go into my machine.

Potato Dinner Rolls - 2 lbs. of dough (24 rolls):

1-1/2 Cups Warm Water
2 Eggs, Slightly Beaten & Preferably at Room Temp
3 Tablespoons Olive Oil
3 Tablespoons Sugar
2 Teaspoons Salt
1/4 Cup Dry Milk Powder
1/2 Cup Dry Potato Flakes
4 Cups Bread Flour
2 Teaspoons Instant Yeast

Set bread machine on "Dough" cycle. After the first rise, remove dough from machine & place it on a lightly floured work surface. Cover & let rest for 10 minutes. Shape into 24 rolls & place on baking pan about 2" apart. Cover with tea towel & allow to raise for about 30 minutes. Brush tops with melted butter & bake in a preheated 375 degrees oven for 18-21 minutes. Take a peak at 18 minutes because everybody's oven is slightly different

Potato Dinner Rolls - 1-1/2 lbs. of dough

2 Eggs, slightly beaten
1-1/4 Cups Warm Water
Olive Oil - 2 Tablespoons
Sugar - 2 Tablespoons
1-1/2 Teaspoons Salt
3 Tablespoons Dry Milk Powder
1/3 Cup Dry Potato Flakes
3 Cups Bread Flour
2 Teaspoons Instant Yeast

Potato Dinner Rolls - 1 lb. of dough (12 Rolls)

1 Egg, Slightly Beaten & Preferably at Room Temp
3/4 Cup + 2 Tablespoons Warm Water
1 Tablespoon Olive Oil
4 Teaspoons Sugar
1 Teaspoon Salt
2 Tablespoons Dry Milk Powder
1/4 Cup Dry Potato Flakes
2 Cups Bread Flour
1-1/2 Teaspoons Instant Yeast

guys can be that way, grant learned his lesson last spring when he got so sick. he missed all that work. it was so bad. he was glued to the couch. i so love this group of people!!! so caring for each other!! oh becky i tell ya the best thing i ever did was go to sallys beauaty sallon and buy one of them wax thingi's for 19 bucks. and then i bought a small thing of wax for like 13 i think. then i use strips of crappy sheets. LOL ya know. the one's we keep using. but they have the strips there for i think 6 bucks. and i also use pop cycle sticks. alot cheaper to use them!! i use olive oil afterwards to make sure all the stuff is off my face. it makes me nice and soft!! LOL so all in all. under 40 bucks to get your stuff done in the middle of the night or whenever you want it done, and no one can look at ya afterwards if ya want, LOL like after ya get it done by someone else. LOL but that's just my opinion. LOL i did my chin and my sides (of my face) just make sure to leave enough pull room!! LOL :')) i wanta go back and see if they have any almond massage oil. then i'll be happy!! yep!! so we went t the store today. grant and i did not mesh. at all. we argued the whole time!! of course he said it was my fault and i say its his fault and bla bla bla. then on the way home we didn't even get out of town and he told me sams club lets ya get cash back, apparently i musta made a face, he was like what was that disgusted face about?? all attituded out. well that was it for me so by now i'm yelling in the kia. and i'm like what? what? i didn't do anything! do ya just want me to draw some eyebrows on?? will that make it all better for you?? will it?? cuz if it will i will!!!! and for your info i don't have a problem with that!! thats just your own problem or guilty consience or something. and i was done!! didn't talk all the way home. and baby that's over 40 mine. a long time for me!!! LOL i think at that moment i actually hated him more than anything!! but we get home and we get inside and its like nothing ever happened. i'm so not kidding!! we got along so good!! i think its just that he's so used to shopping by himself and the stress of spending the very little he got off of his last check from the one job. and he just told me citibank told him that they are gonna repo our house if he doesn't pay them our payment by the 22nd. by now, i'm almost in hestarics inside. that's the reason i didn't want to morgage our house. cuz up til then we owned it. so i calmly ask. honey. are ya gonna be able to pay it?? he say's yes. i'll get paid by then. then i freak!!! I'm bad about that!! but that's no excuse for today. imo. i don't know. it's been crazy!! LOL hope ya'lls day went alot better!!

My favorite right now is Sol's Honey Rolls. The recipe does not call for kneading but I put it into my bread machine anyway, works like a charm: Sol's Honey Rolls 1 Cup milk 1/2 Cup honey 1/2 Cup butter [1 stick] 2 Tsp salt 1 -2 tablespoons granulated sugar* 2 pkges. dry yeast 1/2 Cup warm water [110ÃÂº-115ÃÂºF] 2 large eggs lightly beaten 6- 6 1/2 cups All Purpose flour Heat the milk, add butter and salt. Set aside while butter melts. Stir in the honey. In another bowl, combine the warm water, yeast and sugar. Let it sit until yeast is completely dissolved, about 6-7 minutes. Combine milk mixture with yeast mixture. And stir in the beaten eggs. Beat in 4 cups flour. Add enough remaining flour to make a soft, but not sticky dough. Place dough in greased bowl, turning to coat both sides. Cover and allow dough to rise 1 hour. Punch dough down, and allow to rise another hour. Punch down again, and shape dough into rolls. Let it rise again 45 minutes to an hour or until doubled in volume. Preheat your oven to 375F and bake rolls for 25 minutes or until a deep golden brown. For a very soft crust, brush rolls with melted butter as soon as they come out of the oven. Note: You could omit the sugar from this recipe altogether. I sometimes use about a teaspoon of the honey called for in the recipe to feed the yeast instead of the sugar. As an alternative, I like these and I do them in the bread machine too: Butternut Squash Rolls 1 package (1/4 ounce) active dry yeast 1 cup warm milk (110ÃÂ° to 115ÃÂ°) 1/4 cup warm water (110ÃÂ° to 115ÃÂ°) 3 tablespoons butter, softened 2 teaspoons salt 1/2 cup sugar 1 cup mashed cooked butternut squash 5 to 5-1/2 cups all-purpose flour, divided In a large bowl, dissolve yeast in milk and water. Add the butter, salt, sugar, squash and 3 cups flour; beat until smooth. Add enough remaining flour to form a soft dough. Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. Punch dough down. Form into rolls; place in two greased 10-in.cast-iron skillets or 9-in. round baking pans. Cover and let rise until doubled, about 30 minutes. Thanks, lascatx! I'll try it using milk if I don't go to the store sooner. I used to make loaf bread once a week when I was younger, then bought a bread machine which I don't use too often anymore. Rolls are one thing I've never made. Cawaps, if your kitchen is cold, preheat the oven to it's lowest setting, around 150 degrees. Open the oven door for about 15 seconds to let some of the heat out, put a dishtowel on top of the dough and let rise for however long it's supposed to rise. Repeat if you need to let the dough rise again, but put a tad bit of oil on top to keep from drying out. Question. My oven has 4 racks and most recipes call for the center rack. The 2nd rack looks too high, the 3rd rack looks to low, plus it's closer to the reheating element. I only use the lower rack to crisp up a pizza. Which is best for bread products?

You somehow knew I was going to ask about your frittata, right? Thank you for including the cooking times, methods, and ingredients. I wanted to make a frittata the other night but was low on veg’s. I’d never have thought of potatoes on the bottom like a potato anna… You’ve inspired me… Now, are you positive that's not burned/charred, rather than browned? Ha, ha! neely, I’ve never tried that, but will have to as it looks good! I’ve made fruit and coffee ices in the freezer - not the same. ann_t, there was a huge Fed Ex truck outside late last night and I told DH “That’s Ann’s quail – she shipped some to us!” He looked at me like I had lost it. Wishful thinking… ; ) Your quail, salad, and potatoes would have made my year! Yum! ann_t, the website with pizza pan required an order of $100 minimum, so I had to purchase a cheapo version elsewhere. That pan was 20 gauge and would have been lovely... sigh. Cooking is hit and miss just now. Last night was leftovers, tonight I'm not sure. Promised DH fish tacos this week (maybe), and if I can find some good boneless chicken thighs I've got one more decadent meal for him before I begin packing the kitchen in earnest... oh, and I still have to make a 'ton' of ann_t's artisan bread to freeze for pizzas.

tricia - Thank you for posting all the above! I will give them a trial run using the 1 lb. recipe. It's great to have the other sizes for cooking for a crowd.

amck, I bought the Princess a small bread machine at goodwill. We've done half batches of several recipes with no problems.

As always, I check the hydration of the dough a bit into the knead cycle, sometimes I need more liquid, sometimes more flour, just like with a full recipe.

Thanks, Annie. I'm such a relative novice at yeast bread making that I haven't acquired the instincts to just know this stuff. Also, I know my electric pressure cooker needs a certain ratio of liquid/solids to work properly, and I didn't know if there might be an issue w/ too little of something with the breadmaker.

I was impatient to start my roll making, so I went to the source of my machine and called the King Arthur Hotline yesterday afternoon. They said it should be fine to halve those recipes, so I gave it a try with great results.

I'm doing all this testing now so I don't have disappointing results on Thanksgiving Day. I keep reminding myself that it's only rolls....but I'm always a little nervous when I try something new that I'll be serving company.
