Cleaning wood counters

I've poured over old threads about wood counters and if cleaning info has been posted previously, I missed it so please forgive me if I'm bringing up a topic that has been covered before.

I'm considering a wood counter - likely butcher block, not plank - for my island. I've looked at the info about treatment/sealants and I'm leaning towards one of the food safe finishes. Yay, I'm making progress on my kitchen decisions.

But then I thought, "how do you clean it?"

I can't do as I do with my pull-out cutting board - put it in my sink and scrub it with hot soapy water. Is a soapy sponge sufficient? Or should I be using something else? Do you or can you use a diluted bleach solution now and then (I do with our cutting board)? I wouldn't cut meat on the surface, only fruits, veggies, etc, but I would like to be able to disinfect it when the need arises. If I use a diluted bleach solution to clean it, do I need to redo the treatment/sealant right afterwards?

I want to make sure I understand what's involved before I move forward.
