Do you have 50 or 75 W halogens in your kitchen recessed lights?

Specifically 2 questions:

1. Do you get "baked out of your kitchen" with 75's? (Like the guy at Lowe's told me)

2. Are 50 W halogens enough light?

In my kitchen, I am trying to decide between the 7 1/2" can by Juno so I will be able to do 75W halogens

OR

the standard 6" cans at Lowe's (saving over $400), but the most they will take is 50W without getting too hot and blowing the can. I know I could possibly get away with 75 if they are long necks, but then you see the bulb almost flush with the ceiling and what's the point of recessed lights then, right?

Is it worth it to spend $653 for the Juno package? (75 W)

Or do you think the Lowe's 50 W option $209 will work just fine?

PS I posted in the lighting forum a few days ago and didn't get any responses and it's still near the top so I thought I may actually get a response here!
