hard candy burning

My daughter and I have spent the day making hard candy, something that we have done on and off for twenty years. According to the recipe that I have always used, the mixture of cane sugar, light syrup and water is supposed to be boiled until it reaches a temperature of 300-310 degrees. This year it burned at 300 degrees, so the next time we took it off the heat at 280 degrees and it still burned. We experimented until we found that the sugar water would harden yet not burn at 265 degrees. I've never had this trouble before so I can't help wondering if the sugar and/or syrup have been changed somehow. Either one could have been adulterated or had filler added to it. Has anyone else had this experience?
