Tomorrow Is My Test Batch Of Hard Candy

Hi everyone,

Mom and I will be making our test batch of hard candy tomorrow! I got everything at Wal-Mart on Friday that I needed. They don't sell flavoring oil so I bought flavoring extract (strawberry) and I read that you can add it instead. Some people even used Kool Aid or Jello mixes instead of flavoring oil! We'll be using the stovetop method. A lady that works with dad said to make sure that I had a thermometer. I read online that you can test it in a pan of boiling water to make sure it works right. It's much easier to make with a thermometer - I never make candy without one, and I have several by now, in case one has a bad battery. BTW, what was your alternative to the stovetop method?

Thanks, Lars!

I also read you could make it in the microwave, but we wanted to do it on the stovetop. The thermometer is the standard candymaking/jelly/deep-fry thermometer. I haven't found any digital ones like someone mentioned on a previous thread I posted.

1) If the plant has leaves, you shouldn't bare-root it. Just tease the roots apart a little, being careful not to let them dry out - and pot it. If it doesn't have leaves, go ahead and remove the soil before you plant. 2) It's helpful if the soil is a little damp when you make it. Beyond that, it doesn't matter much if it's damp or dry, but you don't want it wet. It's too hard to work with. 3) No problem I can see. 4) Wait about 2-3 weeks before you fertilize. Then use something like FP 9-3-6 or either of the 3:1:2 MGs, like 24-8-16 or 12-4-8. Let me know if you need that translated. By the looks of the soil you made though, you're pretty well-schooled. ;o) 5) I can't tell you how often to water, Nik. You'll have to figure it out for yourself. It will partially depend on how deep the roots of your plant go - how large the root mass is. If it goes deep into the container, you'll need to water much less often than if your plants are small & the roots only go down a couple of inches. After the plant is well established, you might want to occasionally withhold water until you see some sign of wilting - just to get a handle on how long the plants CAN go between waterings. I was in Florida for about a week and family back here said it was in the 70's and 80's here. I came back and the trees (some )had leaves and the grass wasa foot and a half tall and thick, I had a hard time in the lower yard it was so thick and green. Well, the other night ( Monday?) ruined the leaves on a bunch of Quercus Rubra and one Q Shumardii The Q Nuttallii came close but are holding back their leaves enough to avoid this crap. The white oak family oaks were conservative and weren't fooled. The 2 chestnut oaks are getting restless and are close to leafing out, though. The Willow oaks I have look really bad. The 2 ft tall one has blackened leaves. It looked good before the cold snap. After seeing them in Florida and how the leaves ( not form) look like live oak, I want at least 2 in my yard. My Quercus fusiformis looks totally great after this winter. My Q Virginiana are bare now, but I think they are okay, this winter was no test for them anyway. Long story short I hope my oaks that had their first set of leaves ruined bounce back, the same for others trees.

1. I pour brittle onto a Silpat - the brittle won't stick to it. Silpats, what a wonderful invention. I'd also suggest using the quick microwave method. It rarely fails. 2. You will get lots of discussion concerning "sugar" for making candy, but during a candy-making class the "expert" (in this case, she owns and operates a candy-making shop) said to use pure cane sugar instead of sugar made from sugar beets. I've successfully used both. My sister-in-law used to make jars filled with shards of various colors of "Stained Glass" candy. She also swore by pure cane sugar. 3. After boiling action ceases is the time for adding flavoring in order to avoid a lot of rising steam. 4. Oiled surfaces, such as a cookie sheet can be used, but the surfaces can also be dusted with powdered sugar. 5. "When a solute such as sugar is added to water, the boiling point increases. The extent of increase in boiling point depends on the concentration of the solution. The larger the number of particles of solute (sugar) in the solution, the less the escape of vapor (vapor pressure decreases) and the higher the temperature needed to produce boiling. Boiling sugar solutions do not reach a constant boiling point. As water evaporates, the remaining solution becomes more concentrated, and the boiling temperature increases until the melting point of sugar is reached and decomposition changes occur in the sugar. If heating continues too long, the sugar caramelizes, and eventually, only carbon remains. Because sugar solutions do not reach a constant boiling point regardless of concentration, you can use a thermometer to tell when candy is done cooking. You know that when a sugar solution reaches a desired temperature, it is at the correct concentration. If the temperature goes too high before a pan of syrup is removed from the heat, it means that too much water has evaporated and the solution will be too concentrated. Good luck, Brad. I think candy is relatively easy to make, and I have to make a batch, I'm making a "beer stream" out of a wooden dowel covered with hard sugar candy for a groom's cake, so we'll see how that goes.

I'll look forward to hearing how yours comes out.

Di, Amanda found a cake shaped like a beer mug, with a frosting "head". The beer can gets stuck on the end of a wooden dowel and the dowel gets stuck into the cake. The dowel is covered with poured sugar candy, and it looks like the beer can is suspended in mid-air, pouring a stream of candy/beer into the cake/beer mug. I'll post a picture if/when I get it figured. If the sugar candy doesn't work well, I'll make the "beer" out of fondant....

Good luck Annie!

We can't make it today due to the rain as I read that sugar draws moisture and that it's best to wait for a clear sunny day. I'll take pictures of when we do make it. If it turns out okay, I'll be making some for Christmas. I was thinking of four flavors, two fruit and two spice: cinnamon and peppermint for the spice; strawberry and orange for the fruit. Of course, if we go to the place that sells Lorann Flavoring Oils, I might try something different for the fruit flavors.

Oh, okay Annie I would like to see that! Just a thought, if the candy doesn't work out-does fruit leather come in any colors resembling beer?

Now that the weather's cleared up, tomorrow will be the day to make the test batch of strawberry candy. I'll let everyone know how it turns out! I'll post pictures of it if it turns out good!

Be sure your thermometer is on the mark. Made peanut brittle yesterday and, although I felt it was done, my thermometer overruled me. Almost didn't get it out of the pan and need an ax to cut it.......but the taste is great. Time carefully.
