Beer Dip

This creamy Beer Dip recipe is perfect with pretzels or scoops. This is one of those "lick the bowl clean" recipes.

Ingredients

2 (8 ounce) packages of softened cream cheese (my sis-in-law uses 3 packages, I prefer two)

1 package of Hidden Valley Ranch Dressing (dry mix)

1/2 -3/4 can of beer (any kind, regular or non-alcoholic)

2 cups shredded cheese (preferably finely grated)

bacon bits, green onions (optional garnish)

Instructions

Mix cream cheese, dressing, and beer til you reach your desired creamy consistency.

Then mix in 1/2 cup of cheese, leaving the remaining cheese to sprinkle on top.

Refrigerate overnight to let the flavors marinade.

Before serving, garnish with bacon bits and green onions.

Serve with pretzels or scoops.

This is going to be on our dinner plates tonight, except I'm subbing boneless pork chops.

Orange-Ginger Pork Medallions

2 pork tenderloins (1 lb each)
1 cup fresh orange juice
2 tbsp vegetable oil
1/4 cup finely chopped shallots
2 tbsp minced ginger
2 cloves garlic, minced
1/4 tsp red pepper flakes
1/2 cup chicken broth
1 tbsp soy sauce
1 tbsp unsalted butter

Cut each tenderloin crosswise into 6 slices and set aside.

In a small bowl stir together 2 tbsp orange juice and cornstarch until smooth; set aside.

Heat 1 tbsp oil in a medium saucepan over medium-high heat. Add shallot, ginger garlic and red pepper flakes. Cook, stirring frequently until shallots are light golden, 3 minutes.

Add remaining orange juice, chicken broth, soy sauce. Bring to a boil and cook until reduced to 1 cup. Whisk in cornstarch mixture and boil 1 minute. Remove from heat.

Flatten pork slices slightly with your hand to make medallions. Sprinkle with salt and pepper. In a 12" nonstick skillet melt butter with remaining 1 tbsp oil over medium-high heat. Add pork and cook in batches until browned and cooked through., 4-5 minutes per side. Transfer to a platter.

Add sauce to skillet with drippings and bring to a boil stirring to scrape any brown bits. Stir in juices from the pork; remove from heat; add pork to skillet, turning to coat with sauce.

ISLAND COCONUT SHRIMP ROLLS (Pillsbury)

16 cooked deveined large shrimp (about 1/2 lb), peeled (with tails left on)
1/4 c. cream of coconut (not coconut milk)
1 Tbsp. rum or 1/4 teaspoon rum extract
1 can (8 oz) Pillsbury refrigerated crescent dinner rolls (8 rolls)
4 Tbsp. apricot preserves
1 tsp. grated orange peel
1/2 c. flaked coconut

Heat oven to 375F. Line large cookie sheet with cooking parchment paper. Pat shrimp dry with paper towels. In small bowl, toss shrimp with cream of coconut and rum to coat.

Separate dough into 8 triangles. Cut each triangle lengthwise in half to make 16 triangles. Place 1 shrimp on shortest side of each triangle. Roll up, starting at shortest side and leaving tail sticking out of one side, rolling to opposite point. Place rolls point sides down on cookie sheet.

In small microwavable bowl, mix 2 tablespoons of the preserves with the orange peel. Microwave uncovered on High about 20 seconds or until melted. Brush over each roll. Sprinkle each roll with coconut.

Bake 15 to 18 minutes or until golden brown. In same small microwavable bowl, microwave the remaining 2 tablespoon preserves uncovered on High about 20 seconds or until melted. Spoon evenly over each roll. Cool 5 minutes; remove from pan. Serve warm.

SLOW COOKER TARRAGON CHICKEN (Rachael Ray) 1/2 cup plus 2 tbs chicken broth 4 tbs dijon mustard salt & pepper 4 lbs bone-in chicken parts (breasts. drumsticks, and thighs) skin discarded 3 cloves garlic, finely chopped 2 tbs chopped fresh tarragon 1/3 heavy cream 2 tbs cornstarch 1 lemon, finely zested and juiced 1 tbs chopped flat-leaf parlsey 1 tbs chopped fresh tarragon Pour the broth into a 6-7 qt slow cooker. In a small bowl, combine the mustard, 1 tsp salt and 1/8 tsp pepper; rub the chicken with the mustard. Place the chicken in the slow cooker and top with the garlic and 2 tbs tarragon. Cover and cook on low heat until the chicken is tender and an instant read thermometer inserted into a thigh away from the bone registers 165 degrees F, about 5 hours. Transfer the chicken to a serving plate and cover to keep warm. Strain the pan juices into a small saucepan and bring to a simmer over high heat. In a small bowl, combine the cream and cornstarch. Whisk the cream mixture into the saucepan and cook until the sauce is thickened. Remove from heat and stir in the lemon juice. Meanwhile, in a small bowl, combine the lemon zest, parsley, and 1 tbs tarragon. Top the chicken with the zest-herb mixture.

This is a steak and asparagus salad. The reviews all gave it 5 stars. You can use whatever greens you have on hand, and the Asian vinaigrette would be delicious on other Asian salads and as a marinade. Grilled Steak and Asparagus Salad (Fine Cooking) 1/2 Tbs. black peppercorns 1 tsp. coriander seeds 1 tsp. fennel seed Kosher salt 1 lb. thick-cut New York strip steak 1-1/2 Tbs. olive oil 1 lb. thick asparagus, trimmed Freshly ground black pepper For the vinaigrette 3 Tbs. lower-salt chicken broth; more as needed 2-1/2 Tbs. hoisin sauce 2 Tbs. olive oil 2 Tbs. white wine vinegar 1-1/2 tsp. reduced-sodium soy sauce 2 tsp. minced fresh ginger 1 tsp. Dijon or Chinese mustard 1 tsp. minced garlic Kosher salt and freshly ground black pepper to taste For the salad 4 cups upland cress or watercress 1 large mango, peeled and slivered into thin wedges, or 2 large navel oranges, peeled and sliced into thick rounds 1/2 small red onion, thinly sliced and soaked briefly in ice water Daikon or radish sprouts for garnish (optional) Prepare the steak and asparagus Put the peppercorns, coriander, fennel, and 1/2 tsp. salt in a spice grinder and grind to a fine powder. Asian "Salisbury Steaks" (Eating Well) 12 ounces extra-lean ground beef 3/4 cup finely diced red bell pepper 3/4 cup chopped scallions 1/4 cup plain dry breadcrumbs 4 tablespoons hoisin sauce, divided 2 tablespoons minced fresh ginger 3 teaspoons canola oil, divided 4 bunches or 2 4-ounce bags watercress, trimmed (16 cups) 1/2 cup Shao Hsing rice wine, (see Ingredient note) or dry sherry 1. Place rack in upper third of oven; preheat the broiler. Coat a broiler pan and rack with cooking spray. 2. Gently mix beef, bell pepper, scallions, breadcrumbs, 3 tablespoons hoisin sauce and ginger in a medium bowl until just combined. Form the mixture into 4 oblong patties and place on the broiler-pan rack. Brush the tops of the patties with 1 teaspoon oil. Broil, flipping once, until cooked through, about 4 minutes per side. 3. Meanwhile, heat the remaining 2 teaspoons oil in a large skillet over high heat. Add watercress and cook, stirring often, until just wilted, 1 to 3 minutes. Divide the watercress among 4 plates. I have 3 cans of pumpkin I need to use. Wish I had overnight company coming so I could make this.
