Bathroom wall painting, one coat or two coats?

I'd like to have my bathroom remodeled. The bathroom has the new paint of ultra white color by the seller. But I would like to change the color to light yellow or light green. I talked to a general contractor, asking to paint two coats. He said one coat is good enough, since the previous paint is white semi-gloss and no need to have two coats to cover.

Do I need to insist on 2 coats? Would it be better to pick BM kitchen-and-bath paint (only comes with satin) or Sherwin Williams Emerald semi-gloss paint? Will it be better to paint while remodeling the bathroom or is it fine to paint later together with other areas of the house?

Any input or sharing of experience is greatly appreciated.
