Question about pork specific, meat in general

We are in our adventure of living in Panama now. Many things are new, including food shopping and preparing. After reading some mouth watering posts about ribs, I wanted to make some. US type ribs are not sold in stores, so off to the market I went. There you can buy fresh meat and they will pretty much cut any part you want. I asked for ribs and showed about how much I wanted. When I got home, the ribs came with the loin part still attached, so I cut the loin off and had two different part of pork to make food out of. Our first attempt to use ribs was unsuccessful, after cooking the meat several hours in the oven, it still came out very tough. Then I used the brining method and ribs came out much better. Not completely falling off the bone, but I can try to cook little longer next time. But the loin meat is not as tender as the one in US either. So finally my question, do you think the problem is that it was old pig and should I ask the age next time I pick who to buy from? Is it that I will never get as tender pork here because they raise their animals differently here perhaps?

I was told that Panamanian beef is not as tender as US either. But one of my neighbors gave me some from the cow he butchered and this was an excellent piece. Not sure what cut it was tho.

So any general guidelines, how to choose a piece of meat? any links where I can educate myself? Any information or thoughts are highly appreciated.
