Old Fashioned Coconut Cake

Our likes and dislikes depend, to a certain extent, on where we grew up. Well, I'm from the south and my mother always made Coconut cake on Christmas. She died when I was just 22 (and could not cook a lick)! It took me years to learn - poor kids :)

I came across this recipe some time ago. It's just like my mama made. I only make it during the holidays. Coconut cake is sweet and not for everybody - but it is always a showstopper.

Coconut Cake

Cake:

2 sticks butter

2 cups sugar

4 eggs

3 cups sifted self-rising flour

I cup milk

1 teaspoon pure vanilla extract

1 teaspoon pure Lemon extract

Cream butter and sugar until fluffy. Add eggs, 1 at a time, beating well after each addition. Add flour and milk alternately, beginning and ending with flour. Add vanilla and Lemon. Divide batter equally among 3 prepared pans. (This will make 3 large layers or 4 smaller layers). Bake at 350 degrees F. for 20 minutes or until done. Cool in pans 5 to 10 minutes.

Filling:

1 ½ c Coconut milk

1/2 cup flaked, sweetened coconut (out of 14 oz bag  save remainder to go on top and sides of cake)

3/4 cup sugar

Cook in small sauce pan on medium approx 10 minutes, take care not to burn.

Poke holes in cake and spoon filling over layers.

7 Minute Frosting

1 1/2 cups sugar

4 egg whites

1 teaspoon cream of tartar or 3 tablespoon Light Karo corn syrup

¼ cup ice water

1 teaspoon pure vanilla extract


Place sugar, cream of tartar or corn syrup, water, and egg whites in the top of a double boiler. Beat with a handheld electric mixer for 1 minute. Place pan over boiling water, being sure that boiling water does not touch the bottom of the top pan. Beat constantly on high speed with electric mixer for 7 minutes. Beat in vanilla. Frost top, sides and between layers of the cake. Sprinkle top and sides of cake with coconut.
