This is the recipe that I always use and it only calls for 1/2 tsp of baking powder. You mix it like a pie crust and they are very nice. Sugar Cookies 3c flour 1/2 tsp baking powder 1/2 tsp baking soda 1 c butter or margarine pinch of salt Mix all together like piecrust dough cutting the butter into the dry ingredients. Then add: 1 c sugar 2 beaten eggs 1 tsp vanilla. Chill dough. Preheat oven to 375°, roll and cut cookies. Bake on ungreased cookie sheet for 6-8 minutes. I always double this recipe and then frost and decorate. RL`

The cookie part of the Toll House recipe is a good brown sugar recipe. You can probably get away with substituting brown for half of the white sugar. The baking time will be different without chips. Or you could get a sugar bear and put it in with your brown sugar, or a piece of clean clay flower pot. Or do you have a truly air tight canister? I don't know how long my brown sugar had been sitting when I took it out the other day. Probably the better part of a year. I put it in a small canister, just big enough, in the liner bag (recycled the box), rolled down at the top. It was amazingly dry and fluffy! In fact, the sugar in the new box was a little clumpier. I was awestruck! It was an OXO pop canister. I used to just roll the liner and put the whole box in a Ziploc. Big difference. No clay in with it, but a terra cotta sugar bear also works. Without knowing how much flour your recipe uses, I would add about 1 tablespoon of cocoa per cup of flour to your cookie dough and take out a tablespoon of flour. I would also add a good teaspoon of butter (cocoa has a bit of a drying effect) and a teaspoon of sugar per tablespoon of cocoa. If this doesn't look "chocolate-y" enough, add more :-)
