It just adds more flavor

A couple of nights ago I made a quick dinner of bratworst and sauted vegetables. Evidently I didn't watch it closely enough. While we ate, my stepson remarked, "You know dad I like it when Melenie burns the vegetables, it adds more flavor." He laughed and said he really did like them though - a couple pieces were just a deep golden brown.

I'm making up for it tonight by making them black bean soup with some of the beans we grew and dried last summer. At least I hope it turns out well. I've always made it on top of the stove, but this time everything went in the crockpot that I'll turn on at bed time and leave on low all night. Another thing I'm trying this time is replacing the quarter cup of minced jalapenos with two whole ones that I can just take out when its done so its not too spicy for DH.

When I make stir-fry, hubby likes some of the veggies, especially onions, be over-cooked and caramelized. And I agree, it gives a nice flavor. He also likes grilled onions on his hamburger, instead of raw. In fact, if I caramelize onions, I've gotten hubby to eat quite a few things he might not otherwise, such as stir-fried amaranth leaves with caramelized onions (a recipe I found on-line).

I hope your beans turn out. My slow cooker cooks much too hot (even on low) to do anything overnight without drying out. I use my Thermal Cooker for that application.

Grainlady, you are right about slow cookers cooking really hot even on low. Sometimes I have to cut at least an hour from the cooking time called for in the recipe, lest the meat completely fall apart. The crock pot worked just fine for this recipe, though.

I had put the soup in the refrigerator this morning and added the potatoes and carrots when I heated it for dinner today. However, I forgot to take the jalepenos out and put one in DH's bowl. I found out when he screamed "What the hell was that?" and ran in for some milk.

Whipped Frosting...Needs more flavor, please help

I've been making this icing for years. My recipe is slightly different (flour/milk/vanilla amts.) Waldorf Astoria Frosting Cook together until thick: 1 c. milk 3 T. flour (Beat until cool) Cream together & beat until light & fluffy. 1 c. butter 1 c. sugar 1 Tablespoon Vanilla Combine the two mixtures, adding the cooked portion gradually. (I always just incorporate the two mixtures & beat it briefly.) Love this frosting but it probably resembles a filling a bit more than a frosting. That is, if you want fancy swirls & peaks, I don't think it's going to work for that. Maybe the other recipes using more flour might be a bit more decorative? Anyway, I love it just cause it tastes good and is just sweet enough w/o being too-too sweet. Oh, I always use salted butter and a 'glug' of vanilla--don't measure. Several posters here rave about KA's 'Fiori di Sicilia' flavoring so maybe that would amp up your frosting? (I haven't gotten around to ordering any of it yet...)

When I first got really interested in daylilies How Beautiful Heaven Must Be was just coming out. I longed for it. Not only because it was such a pretty daylily with great form, but also because of the name. However I also found out back then just how expensive new daylilies can be. I still love it though and it would be a toss up between your Wonder of It All and HBHMB as my favorites of this group. How wonderful that you have both. After more research, it seems like Page might offer good, deep, strong flavor I'm after. But the University of Florida says it should be planted near a pollinizer such as Lee. See here: https://edis.ifas.ufl.edu/ch067. Page is a Mineola Tangelo/clementine hybrid and Lee is an Orlando Tangelo/clementine hybrid. My neighbor who runs a plant nursery at his house has a nice big Lee for sale. He's had it for a few years. I could get the Lee from him and get a Page and plant them together- match made in Heaven? Would planting them together like that help with any disease problems? I've also found out about the new Sugarbelle mandarin. Read about it: https://www.google.com/?gws_rd=ssl#q=sugarbelle+mandarin. After reading about it, I'm definitely getting at least one, might even get two, heck why not? My question is should I forget about the Page/Lee combo and just get a Sugarbelle? It seems my research has led me to believe that Page and Sugarbelle have similar (strong, deep, complex, intense) flavors, but the Sugarbelle has the advantage of being more disease resistant and hardy. And are Kishus overrated? Are they mild? I am still thinking about getting one. I will be buying from Harris Nursery. Oh dear, Melanie, he ATE that jalepno? Poor guy...

Like you, I find the crockpot cooks too hot for a lot of applications, but it works perfectly for me to make a pot of beans. It cooks on low all day and is ready when I come home. Split pea soup, though, only takes 4 hours.

And it's not burned. As Grainlady mentioned, that is "caramelized". At least that's what my daughter Ashley tells me. Her husband says he can always tell when supper is ready, the smoke alarm goes off!

LOL.. Melanie, I was laughing so hard at that last night that I'm afraid I forgot to respond. LOL.. I have a bunch of crock pots, mostly because I used to use them for small home catering type jobs. I tend to use the one that's just a rectangular metal pot sitting on a base, the most. Lately though I've been using the six quart Nesco, since it holds a bit more and I can really vary the temp closely. Poor hubby. You painted a good picture. I can just hear him. Chuckling still.
