Fresh Corn right from the farm

We talk about this every year, at this time.

I have been getting Fresh Corn at a Farm.

I forget the name but it is fairly large.

The kernnels are a light Gold color.

It is the Sweetest and most Tender that I've ever had.

I asked the name but I forgot. Think it is a midwest State

name. ( Minnesota ? )

Have all the cold States been getting fresh corn yet.

They say that Silver Queen is about 5 down from the top now. But I still love it.

Is it "Peaches and Cream"? That's my favorite.

We have been enjoying the local crop since the 4th of July. I still like silver queen. Peaches and cream has been my favorite for a long time. I blanched and froze a bushal last month. Love pulling that out and enjoying it in the off season.

Only certain varieties of sweet corn will have their flavor affected by a nearby field corn planting. These are the ones labeled "super-sweet," "sugar-enhanced," etc. That's why some of the advice above is incorrect -- though it would be true for "ordinary" vegetables (and non-enhanced varieties of sweet corn, for that matter). You could try timing your planting to avoid cross-pollination, but I wouldn't rely on starting indoors; direct-sown corn catches up quickly to transplanted. Or simply plant a variety of sweet corn that doesn't become starchy if cross-pollinated. Some people prefer these; their disadvantage is that the corn must be eaten very quickly after harvest, while the enhanced varieties can keep their sugar for days. Thanks to all of you for the great information. I think I will just wait until the spring to start raising my own day-old chicks for layers. I know from experience with raising the Cornish X broilers on pasture that they form very tight-knit families. (They do this immediately and since they just have a short life of 6-8 wks, I want to raise them from the very beginning. I will not buy 16 wk. old pullets for raising for eggs.) Since the layers are a rather long term project, I want them to be secure in their friendships. I just think it will be a more humane way to raise them and I also think I will enjoy them more. The only problem with this is that we want to start in the spring with a batch of 200 Cornish X broilers and I wonder if the day old layers will be OK right in with those? I would order the layers from McMurray because I figure if I am going to have them long term, they might as well be exotic. I will again order my Cornish X's from Sunray since we love they fact that they are very active an love to forage on pasture. Since the layers are slower growing, will they have a problem in a brooder with the fast growing broilers? Maybe we are biting off too much all at once, but we sure aren't getting any younger. Every year counts!

tricia, I blanch because of habit,partly, and because of the varities of corn I sometimes grow. The "old" varieties had much lower levels of the sugars that turned to starches quickly and I was always taught that blanching would stop/slow that enzyme change. Now most people/companies grow the super-sweets, the sH2, the sugary-enhanced, bi-colors, etc. Today's high-sugar hybrids are far more sweet and so the change is not as noticeable, if noticeable at all. (Those enzymes do continue to work, even in super sweet corn and even when frozen, although much more slowly) Those hybrids have very nearly negated blanching for all but the diehards. And, of course, those creatures of habit like me who tke a couple dozen ears of Kandy Korn and blanch them without even thinking, LOL. However, I don't always grow the super sweets, I grow the old fashioned heirloom kinds occasionally, they are less sweet and more "corny" in flavor, and if it doesn't get blanched it becomes animal fodder in flavor pretty quickly. Because I like my corn just cooked, 5 minutes tops in boiling water or a couple minutes in the microwave, my frozen corn just gets warmed before serving and it's ready. Annie

I understood your post, Barnmom. You're right about the food labeling, Goldgirl. It's very frustrating when we read labels, but can't really trust what we read because they're allowed to basically lie on the labeling. But, that's another subject from the original post. Whether a chicken is considered organic or not is based on the feed it's given, among other things, I think, such as hormones, medications, and that sort. However, I'm really talking out of my confident knowledge base here.. If a chicken is fed organic grain, and nothing but organic grain, it's not going to taste much different than a chicken that's given conventionally raised grain. That old saying, you are what you eat, applies to this case. It's the pasture raised chickens that are going to taste different, most likely, because they're eating bugs and grit and whatever their fancy tells them to eat, along with whatever grain they're given. At least, that's the case with the eggs I get from the farmer. Sally

I still prefer the old fashioned Golden Bantam. I find the new corns too sweet.

I have found over the years that the best way to freeze sweet corn is just as it comes off the stalk -- no cleaning and definitely no blanching.

It thaws out crisper and sweeter than any other way!

Hey Carmen,

Are you suggesting leave the husks and silk on? I tried many different ways, but not that. I want to avoid soggy corn so how do you cook it after you take it out of the freezer?

But what ways do you recommend cooking it?
Roasting with the husk on? High temp or low?
Boiling?
Steaming?

I'm never sure how long.

Yes, I leave the husks and silk on for freezing. After they are thawed, I use them just as I do fresh sweet corn - I soak them in water for an hour and then put on the grill for about 20 minutes. Hmmmmm good!
