Lasagna - Can't Get the Cheese Filling Right
Comments (47)Food is so variable that I can't understand absolutes. I think it was on Top Chef recently that they featured the heretic who first did parmesan cheese five ways, incuding frico and foam, and he's now considered a king and his efforts seminal. There are somethings that are innovative and good, but called by ”wrong” names. I remember reading that Wolfgang Puck, when he first got into the frozen foods biz, ran afoul of government regulations which defined pizza as having tomato sauce. IIRC, they compromised for that particular pizza by adding sliced tomato, but eventually decided that Michelin star chefs should define their food, not regulators, so they rewrote the definition. or something like that. I think the controversy also helped by publicising that pizzas might not have tomatoes, thereby changing public expectations. The Italian woman who taught us lasagna also taught us the ragout. There's a very basic recipe with canned tomatoes (fresh can be used—they just cost more and take a lot more work— and dried herbs that is the framework. The unwritten part is dependent on season and what you can afford, plus cleaning the fridge. Maybe not peas (shudder), but pretty much any alium, brassica or umbellifer could find it's way in, as well as nightshades and squash. Sausage for the flavor, or other meat and more seasonings/herbs/spices etc., to make up for it. Over time I've learned that a green bell pepper is necessary for it to taste "right" (and oregano, of course), and that marjoram makes things taste like pizza. Otherwise, pretty mich anything goes and it ends up pretty much the same as a whole. And using the framework of what we call lasagna, the dish, I also make lasagne, the pasta, with a barbecue chicken profile, and a pumpkin one. Definitely American. Comments (23)Many people on here definitely write that word as "definately". Cemetery becomes "cemetary". But the one that troubles me is that many use "loose" for when they can't find something, rather than for a belt that's too long and lacks enough holes (or "loose" change). I say that when I "lose" something, I can't find it. I got on some people's case here a while ago about "weird", talking of "i" before "e", except after "c", except in such cases as "neighbour" or "weigh" ... and had to eat humble pie, for that latter list, weirdly, includes "weird", as well! (As for "neighbour" ... Canadians spell funny [i.e. peculiarly], as well). I think that there are a couple of others that are sort of my pet peeves, a;so ... but can't think of them at the moment, so I guess I'm not all bent out of shape over it! I have a hard time keyboarding the letters in correct sequence, too often getting two (sometimes more) in reverse sequence. It seems to me that we should give our children the example of doing things correctly and being precise, when possible. They should set their vision on excellence, for they are in global competition, these days, which is getting more intense. Those who figure that good enough will do ...will get left in the dust, I think. I don't have grandkids, and I am not exactly unhappy about that, for I think that life will be a great deal more difficult for people in our part of the world, within a generation. Our rich guys (mostly "guys") are getting really rich, and the numbers of the poor are expanding as the middle class gets hollowed out. Look at South America a generation ago ... and still, to a point. The means of production, of producing wealth, held in the hands of a few ... with millions of peons. End of rant. Comments (67)mtn, we in the maritimes are REALLY familiar with Japanese tourists' love of Anne of Green Gables. The most adorable national obsession ever. Cute story, we were in Nagasaki last year (BEAUTIFUL place! I had no idea what to expect and I absolutely loved it). We did touristy stuff during the day. At sunset I convinced my husband to stop by a waterfront park to observe locals before getting back aboard. An older lady approached us asking if we were from the ship and where we were from. On hearing Canada she got pretty excited to talk about Anne of Green Gables and concluded by saying that for Japanese, even the older ones, "there's a little bit of Anne in all of us." Fave shots from the park More Nagasaki anecdotes: I was excited to see my first REAL Japanese garden in JAPAN so I dragged husband to this vaunted garden near the ship. Little did I know it was the oldest European-style garden in Japan! Then we spent about 20 minutes looking for the Glover Skyway, which I thought would be a scenic hillside road but was in fact an elevator. So then we followed these signs that said "Mountain Observatory - 400m" (btw there is little English in Nagasaki so we had to get a lot of pointing help from locals) and ended up going up MANY hundreds of stairs to the very top of the nearest mountain. But the path was very cool, going through backyard gardens and a beautiful forest full of informal shinto shrines. So it was worth it even though we both almost died. Comments (16)Wow, I'm learning a lot about MLS. How would I find my local MLS online? I thought that was only for the agents. Roselvr, one of the enhanced listing agents you linked I've never heard of (1st link - this house has been on the market for quite some time, looks like they just re-listed with a new agent, word is the house needs some major work). And the other is from an agency I interviewed but they did not call me back as promised so I wrote them off (2nd link - this one's been on the market longer than us and I think it's over priced, especially since it's not in the best school district and needs updating). We are in a sellers market here and because prices have doubled in the last 5 years some people are listing their homes just to test the market and see how high they can push the price. I'm not surprised by the bad review from the renter. Our agents office rents and/or owns several properties, most in the bad area of town. It's a bit scary and crazy around here, people living in tents or campers because of not enough rentals (oil & gas booms bring in the temporary & transient type of workers - most aren't looking to buy). My agent was partially chosen because he was the #1 agent the last two years and he sold 3 homes in our neighborhood in the month before we listed. One of those homes was on the market for months with another agent, a hard sell because it was nearly full to the rafters with junk. We knew when we signed with him that we wouldn't be getting an enhanced listing. Anyway, word about agents gets around in small towns and the market/advertising is different in small towns, mostly stuff like word of mouth. I asked my agent to make sure the zip is listed in the MLS - he said it should have been automatically entered, but he will check. We plan on reducing our asking price as soon as we get back from this trip (we've been away over two weeks now) - I think the flat roof and sw style is scaring off buyers, we've had several say they want to make offers but don't follow through + one very low ball offer. We haven't hit the average 60 DOM yet, but I want to be pro-active. Thanks for all the research and digging roselvr. Amazing what you can find! One local agency has a nice website with on-line listings (they are the largest agency, we bought our home through them, but they are another who didn't return our call so...).
