help with monorail-tech lighting

We ordered cabinets yesterday, so now I'm looking at lighting for the kitchen. We'll have an island 66x48, with room for 2 stools on the dining room side. I'm looking at the monorail lighting from Tech Lighting, and like the look of a stretched out S curve, with pendants over the stools and spots looking towards the work areas of the kitchen.

We'll be taking out soffits, and changing the ceiling in the kitchen to cathedral since it's open to the dining and living rooms which are already cathedral.

I was advised to use a remote transformer to keep it nicer looking.

Questions:

1. Can I put the remote transformer above the cabinet above the fridge?

2. Could I hide it behind the 4" molding on top of the cabinet? It seems the shortest distance to a place to put the transformer.

3. How much light will the spot lights provide since they're low voltage?
