Are you possibly thinking enchiladas?

Burritos are warmed large tortillas filled with cooked stuff (rice, beans, meat of some kind). Sometimes they're sauced, sometimes not but they're never "cooked" (not even microwaved) after filling -- they're served immediately after filling.

Enchiladas (which I've found to freeze rather well) are smaller tortillas filled with cooked vegetables and/or meats, rolled, covered with sauce and cheese and baked in the oven until the cheese gets bubbly. Kinda like a Mexican lasagna. I've often frozen the finished product and nuked it later or warmed it in the oven, covered.

My thinking is that you can freeze the chicken (pulled off the bone) and play with it later.

Sorry Joe, but around here we do often warm/cook our burritos. Smiles. We often fry them in corn oil. Love the taste of a flour tortilla fried in corn oil. I don't bake them or heat them when they're fresh unless I feel like frying them, but I do heat in the microwave if I freeze them. Aside from liking the taste of fried in corn oil the other main reason I heat a burrito is because I like my cheese to be melted. Maybe not traditional but it works for us and I learned the frying in corn oil trick from a Mexican friend of mine.

Kate I often freeze extra made already burritos so I have a very quick meal. I don't warm them first, just fill the burrito, and then wrap each one individually tightly and with a few layers in plastic wrap. Then I put them all into a freezer bag. When I want one to eat I just nuke from the frozen state for between one minute [for just beans and cheese] to two or more depending on amount of filling. They keep quite a while when wrapped well.

I do frozen burritos all the time. Have several kinds in the freezer right now.

Beef bean and cheese
Sausage egg and cheese
Chorizo egg and cheese

Fill flour tortillas (not too full) and wrap tightly. Wrap those tightly in plastic wrap or aluminum foil and freeze. To reheat, take off plastic wrap or foil, place on plate and cover with a just barely damp paper towel. Depending on your microwave, heat on medium or high for one minute, turn, re-cover with paper towel and cook another minute or two, until heated through.

Joe I do hear what you're saying. We make our burritos like you said normally and then I put them in a small casserole pan, cover with cheese and salsa and bake for about 30 minutes. Mmmmm..,
