Soapstone vs honed black granite - honest opinions needed!!

Here I am again trying to make counter decisions many months into our project. But the tear down starts this month so crunch time! Remodeling 1910 foursquare, farmhouse style kitchen with cherry shaker cabs, white subway backsplash, likely slate-look tile floor, and struggling, of course, with counter decision. Have read many threads here about soapstone and still not sure. Originally planned for Paperstone but (as artemis78 and others warned) priced out almost twice that of granite and ss, even though we live in WA state, b/c have to buy entire slabs. Ouch! Got good quotes from local stone guys, who only charge what you use, for Soapstone Julia and Soapstone Clasico as well as honed Absolute Black granite (about same cost as ss) and Nebula Satin granite (about $3000 more). Considering doing the granite with very cool "chiseled" edge for more organic look. Do not like polished granite. Would not want real veiny ss, wondering if any ss would be too much with tile floor. Am concerned about maintenance with ss - we have an old house and are okay with the patina issues, lived in/loved feel of things (our original fir floors scratched to heck by dog and two small kids - which is why there's not going to be fir in kitchen, but if it's salvageable (under 2" plywood & vinyl currently), will recycle elsewhere in house) but don't want water marks and have to be oiling all the time. Thoughts would be greatly appreciated! TIA.
