Provencal Vegetables

The picture of this dish looked amazing. Makes as much as your baking dish can hold.

The trick to this dish is that the oven has to be blazing hot. The result is a dish of vegetables, cooked until the flavours have concentrated and the whole thing has melded together.

onions

olive oil

zucchini

eggplant

sweet peppers

tomatoes

Saute a couple of thinly sliced onions in olive oil. Thinly slice eggplant and zucchini lengthwise. Coarsely chop sweet peppers. Use equal amounts of the vegetables.

Spread the sauteed onions over the bottom of a gratin dish. Layer in the vegetables, seasoning with salt and pepper as you go. Drizzle olive oil over the top.

Bake in a 450 degree oven until the liquid has evaporated and the vegetables have sunk into a deep-coloured confit, about 2 hours. Check it halfway through. If the top is browning too quickly, cover with foil and continue cooking.
