Roasted Garlic Tomato Soup

I'm making CarolReadingLady's Roasted Garlic Tomato Soup to put in the freezer. Thinking about adding celery to it. Question is do I add it to roast in the oven or add it to the pot after I take it out. On the other hand, in your opinion, is this a good idea?

Well, if you add celery then it won't be Carol's recipe. But I think it would be good, but different.
I would add the celery to the pot after the rest of the stuff was roasted.....I think roasted celery will get stringy and don't think roasting would add much to the flavor.

I thought so to, Linda. I made some last year and we liked it a lot. Changing the recipe doesn't bother me as long as I don't ruin it! Re: not Carol's recipe.. I'm not a purist...and it's going in the freezer, not like I was canning it.

Do you think it might be just a natural separation of tomato solids and liquids? I sometimes get a thin layer of "different looking stuff" on top of plain canned tomatoes depending on what variety I've used. Obviously, no oil is involved :-) I just twirl the jars around after I've taken the rings off (not tilting jars) and almost always, the layer of "stuff" disappears and gets suspended back into the contents. Might be worth a try?

I just made it again tonight. I forgot to roast my onions to so I just got one and cut it up small and fried it in some olive oil until it was translucent. Then I put it in the pot and used the blender on it. Man it was so good I had to get me a little more in my bowl. lol This is seriously some good stuff. I always put the heavy whipping cream in mine when I serve it.

I would not hesitate to freeze the soup. You may have to blend it again after it thaws. I freeze my roasted red pepper bisque. It just needs to be whisked after thawing.
