Help with Kitchen Lighting

I'm in the process of completely redoing my kitchen. Nearly all of the plan is worked out, except I've had a hard time figuring out what to do for lighting.

I have pretty much determined that recessed cans will not work because the ceiling is sloped, with only 2x6 joists, and as far as I have been able to determine there are no remodel-type, IC rated, sloped-ceiling, recessed cans that will fit in a 2x6 joist space.

I have therefore been thinking about using monorail-type low voltage track lighting, with standard short spacers on the low side of the ceiling, and longer spacers on the high side of the ceiling.

My current thought is to have two 300W track low-voltage track light sets. One above the sink-side counter (where the ceiling height is about 7' 8" at the wall, and another track aboue the other side counter above the cooktop (where the ceiling height is 10' less 10" for the existing structural beam) A further thought was to have the track bend over the peninsula, and use two pendants over the peninsula.

So my questions are:

Does anybody see any problems with this plan?

Does anybody have a better plan?

If I use this plan, what size bulbs and how many and where should they go? 6 50W on each track ? 8 35W on each track?

Would this be too much light? or too little?

Where should the switch/switches go?
