Your favorite left-over recipes

I have a few things that I really like that uses left-overs and I will on purpose make extra of a particular ingredient so I can make it later. Do you do this too and if so what are your leftovers and recipes?

My top favorites are very simple, but still my favorites:

Meat and Potato Hash (just what I call it)

Leftovers needed: Boiled potatos and any kind of meat that can be cubed.

cube potatos

cube meat (I will at times use two kinds if I don't have enough)

chop a yellow onion (yellow just happens to be my favorite sauteed onion)

Sautee onions, add potatos, and then the meat. Serve with pickled beets or nothing. Sometimes I'll add a fried egg to the side.

Potato cakes

Leftovers needed: Mashed potatos

Take mashed potatos and add a few eggs to make it a creamy soup - not runny, but more on the heavier creamy side.

Heat a frying pan and put some butter in and put batter and cook just like pancakes. Add a little butter before each pouring of batter.

Sometimes I serve with a side of bacon and other times just lingonberry jam or I'll eat just as is.

Neither is probably considered very healthy, but I still love it. I'm sure some kind of vegetable side etc. probably would help the situation.
