Please weigh-in on wood & stain, floor

Hopefully my KD and architect are in sync on the final design. There are just a couple of decisions yet to be made. I would love opinions please! The look of the kitchen is late 19th to early 20th century. Our house is vernacular Victorian, not Arts and Craft (although I love the look!). All the rehab woodwork is oak. It is so-so. Had I been more aware, I would have used cherry or mahogany. All the original woodwork is painted. We will rehab the rest of the house and probably use stained trim. I can't decide on what kind of wood for the kitchen cabinets. I am leaning toward cherry, but QS oak is very nice, too. They are the same price so that is not a factor in the decision.

Then, I don't quite know about the stain either. I love the warm tones rather than browns, and nothing light or totally natural. Does one of these stains look like a best-choice? I think I would look like the island dark with a wood countertop.

The existing floor needs to be replaced. It is thin strip oak. The tile in the image below looks vintage to me, and the cabinets play a more central role in design. So, wood or tile?

The link is to the cabinetmaker's gallery with our door style, which is a nice cherry. I like it! I have spent so many months on this, I am just so afraid I'll get it wrong. Your help is so appreciated. This should probably be on an 'I can't make any decisions forum' LOL Judy

The right side-dining room will be different. The fireplace will be an open pantry. The grey-white in the cabinets will be punched tin like is used in a pie safe cabinet.
