Backsplash Advice - How far to go with subway tiles

This forum has provided so many ideas that have helped with our kitchen renovation. Now we have a dilemma and need some advice..

We have ivory shaker cabinets, silestone cemento countertops and will be painting the kitchen a very light grey. We have a vintage home and are going for a classic, clean look. We plan on using white subway tiles for the backsplash and this is where we need some advice.

2 questions based on the pictures attached (sorry, they are upside down )

1. How far should we extend the subway tile? Should we stop where the upper cabinet ends or extend over to where island will be -where there is no upper cabinet?

2. Do you think a very light grey grout would look nice or would you stick with white
