Scalloped Potato ?

It's almost time for the RV to hit the road again. I made a big batch of scalloped potatoes for Easter. I hate making them, as it seems to take forever to make the white sauce, but do enjoy them.

My question: Can I freeze them after they are made? I don't care how they look, so much, as long as they taste ok. It would be great to have some in individual portions in the RV freezer. I'm already starting to think about things I can cook extra of to freeze for quick meals!

I did the thing that I think Ann suggested about cooking the potatoes in milk and cream....made their own white sauce!!
Added some garlic to the cooking milk and potatoes, some butter and a bit of cream cheese, and put them into a casserole with some chopped green onions and shredded cheese and baked. Yummers and I am sure it would have frozen well either before or after baking.

I love scalloped potatoes, but do it the easy way with thinly sliced potatoes and onions and then cream and salt and pepper. I figure there's enough fat in there that I don't need butter. I think they're delish!

I like cheese in my scalloped potatoes. These are my two "go to" recipes. Potato Gratin Yield: 6 servings (serving size: 1 cup) 1 clove garlic, halved Cooking Spray 1 c onion, chopped 6 medium sized baking potatoes, peeled and cut into 1/8 inch slices 1/4 tsp salt 1/4 tsp pepper 3/4 c extra sharp cheddar, grated 1/4 c romano cheese, grated 1-3/4 c chicken broth 1 c evaporated milk Preheat oven to 425 Rub a shallow 3 qt casserole with cut sides of garlic halves, discard garlic. Coat dish with cooking spray. Coat a non-stick skillet with cooking spray, place over medium heat until hot. Add Onion and sautÃ¯Â¿Â½ 5 minutes or until tender., set aside. Arrange 1/3 of potato slices in prepared casserole, sprinkle with half the salt and half of the pepper. Top with half of the onions and half of the cheeses. Repeat layers, ending with potato slices. Bring broth and milk to a boil over low heat in a small saucepan. Pour over potatoes. Bake, uncovered for 50 minutes or until potatoes are tender. Let stand 5 minutes before serving. How far ahead can I assemble scalloped potatoes?

Raw potatoes will turn dark if not submerged into a liquid....or slightly precooked. You can prepare ahead if all the potatoes are "under milk" or partially cooked. I would partially cook the potatoes, slice and assemble the dish, then cook.....and remember that a really big dish can take a long time to cook or even heat up if it's been refrigerated. Linda C

My grandmother kept her family alive by running a boarding house for boys in a university town during the Depression. She made scalloped potatoes in a frying pan -- par boiling the sliced potatoes in water, then pouring off the water before adding the milk, flour and seasoning, bringing it all to a near boil and simmering until done. My mother used to make this. It was less 'starchy' due to draining the water off. If we had ham or cheese, it went into the mix -- reducing the need for salt. I can't remember when the onions went in, and I don't remember them being diced, just thinly sliced.

Yes, we put the pork right into the liner. I usually use the rack, Elery doesn't, it works both ways but his way has the pork sitting in the fat. We also roast whole chickens on the rack, and I use it for bean soup, I just toss everything in there and set it to about 350F, let it cook til it's done because it's faster than the crockpot (which I only use if I'm going to be out all day). it makes a fine pot roast, a glazed ham, just about anything I can do in the oven. I use the big Nesco to make stock, I toss all the backs/necks/feet/bones/etc into the Nesco with a couple of carrots, quartered onions, stalks of celery, salt, pepper, bay leaf. When that all gets nicely browned and roasted, I add the water and let it simmer 18 hours or so. Strain it out, give the carrots and chicken bits to the dogs, toss out the bones and other stuff, refrigerate until the fat rises to the top and skim that off. Then can or freeze the stock. Your small Nesco could do the same thing on a smaller batch/basis. But then comes the question as to what I should do with 2 pints of chicken fat in the fridge, besides fry potatoes? Annie

Tami, I've never tried to freeze them, but we must be thinking alike. I just made some tonight, and had them for supper, I used the leftover ham from Easter to add into them.

I just take the leftovers to Amanda, LOL, I never try to keep them, so it's an interesting question.

Frozen potatoes are edible, that is about all. I've frozen soup with potatoes in it before and it really isn't very good when thawed.

My daughter will not eat scalloped potatoes in any form. She hates them.

I made Tyler Florences scalloped Potatos for Easter I doubled the recipe and everyone loved them,the whole tray went.Tylers recipe: 2 lbs potatos sliced thin (I used Yukon and a mandoline) Butter the pan....on the stove heat 1-1/2 cup heavy cream add 1 sprig Thyme 2 Garlic Cloves minced 1/2 tsp Nutmeg and heat.....layer the potatos each layer sprinkle with a little salt and pepper when done Remove Thyme sprig pour the cream over potatoes cover top with 1/2 cup grated Parmesean bake uncovered in a 375 oven for 45 minutes.

Tami, I think you can freeze them, but they will probably separate a bit when thawed and the texture will suffer some, as well. But I bet they will still taste good!

When frozen the potato's cell walls blow apart from the expansion. So, diced potato added to soup or scalloped doesn't freeze very well. However, if the cell walls have already been blown apart as in mashed or twice baked...they freeze just fine.

Personally I wouldn't freeze scalloped potatoes. They just don't taste the same.

Eileen, that is the way I have been making scalloped/gratin potatoes for years. Except for the nutmeg. Rich and delicious. One of the few things I don't mind as leftovers.

Tami, I wasn't going to weigh in here, but tricia's comment made me do it. ;) I just finished making twice baked potatoes yesterday, which have almost the same ingredients as scalloped. (Except maybe for the carmelized onions I added.)

If your goal is to make individual servings, those are the ultimate in individual portions as you crisp the skins and use those to hold the potato. I made 40 potato halves, add broccoli (and ham, chicken or bacon for a protein sometimes), and freeze them for a quick dinner. Those would be perfect for your rv and they're self-contained.

Claire, the twice baked is a great idea! How do you make the filling. I can do the add ins, but do you do the filling like you would for mashed?

You can't tell I'm ready for the RV to come home so I can get it ready for the road, can you!? DH is always raring to go. Hurry up so we can leave in the morning, stay on the road until dinner/supper time, then want a good, but fast meal when we get back, that I don't feel like fixing after being on the road all day. We like to base ourselves somewhere, then wagon wheel out different directions in the truck for the day. It sure saves gas when you only get, if you are really lucky,7-8 mpg, but usually less!
