Bathroom tile question in kitchen forum...

I know this is kitchens but every time I post in Bathroom, I get very little advice.

I've been reading some old threads especially the one on things people hate and trends. How do I pick a tile that isn't a trend and go out in a few years and one that I'll like for a very long time. Kitchen and bathroom remodels are time-consuming and overwhelming with choices and expensive so we won't be redoing the redo, Did our kitchen with help from you and now I'm on to the first of our bathrooms.

Is gray really a trend? I like gray. I want something simple. I tend to just go with what I like which is usually simple. I'm thinking a charcoal gray porcelain tile or even a charcoal gray for the floor in big 12x24 tiles. But for the walls and shower, I'm confused. Do I go lighter? The bathroom does not have a window. The shower will be tiled so I want a simple mosaic on the floor.
