eaglebrand coconut cream pie

I found a recipe last week for eaglebrand coconut cream pie and it called for 2 cans of eaglebrand. I know it sounds very sweet but i wanted to try it anyway.Now i can't find the recipe. Does anyone have it...

Clair, if you don't find the recipe you were looking for, this might appeal to you. If I were making it I would make my own graham cracker crust and would use whipped cream on top instead of cool whip, just because I don't like cool whip.

PERFECT BANANA COCONUT CREAM PIE

3 tbsp. cornstarch
1 1/3 c water
1 (14oz) can Eagle Brand milk
3 lg. egg yolks - beaten
2 tbsp. butter
1 tsp. vanilla extract
1/2 c flaked coconut - (toast some for top)
2 med. bananas
lemon juice
1 (6oz) graham cracker crust
Cool Whip

Dissolve cornstarch in water (heavy saucepan). Stir in Eagle Brand and egg yolks. Cook and stir until thickened and bubbly. Remove from heat - add butter and vanilla.
Cool slightly and fold in coconut. Slice bananas and dip in lemon juice. Drain, then arrange on bottom of pie crust. Pour filling over bananas; cover.

Chill four hours. Top with Cool Whip. Garnish with toasted coconut and sliced banana, if desired.

I made Jude's Banana Coconut Cream Pie yesterday. Delicious! Thank you, Jude, for posting it. My DH loves coconut cream pie and banana cream pie so this was the perfect pie for him. I'm typing it into my recipe book right after I post this.

I've had excellent results with this one. You can substitue a baked regular pie shell for the Almond Crumb Crust if you like: COCONUT CREAM PIE WITH ALMOND CRUMB CRUST Almond Crust 1 1/2 cups vanilla wafer crumbs 1/3 cup finely ground blanched almonds 1/4 cup packed brown sugar 1/4 tsp nutmeg 5 TBL butter, melted 1/4 tsp almond extract Combine all ingredients & pat the mixture evenly onto the bottom & up the sides of a greased 9" pie plate. Bake in a preheated 400Â° oven for 8 minutes or until lightly browned. Cool. Filling: 2 cups milk 1/2 cup sugar 1/4 cup + 1 TBL cornstarch 1/2 tsp salt 2 egg yolks, beaten 1 TBL vanilla 1 TBL butter 1 cup shredded or flaked coconut Scald the milk in a large saucepan. Mix together the sugar, cornstach & salt in a small bowl. Slowly add the dry ingredients to the heated milk. Cook over low heat just until thickened, stirring constantly. Remove from the heat. Add a little of the hot mixture to the egg yolks & stir to combine. Return to the suacepan along withe the vanilla, butter & coconut. Cook over medium heat 3-4 minutes, stirring. Remove from heat; cover the mixture with a sheet of waxed paper or plastic wrap placed directly on the surface so the filling won't form a skin. Cool, then chill 2 hours or more. Pour the filling into the pie shell. Topping: 2 cups heavy cream 1 tsp vanilla 1 tsp sugar Combine the cream, vanilla & sugar. Whip until the mixture forms soft peaks. Bulldinkie, that was exactly my understanding of coconut cream pie, that the shell is baked first, then a pudding/custard filling is cooked on the stovetop, poured into the shell, and topped with meringue or whipped cream, either is technically "optional", but not in my opinion, LOL. Coconut custard is a custard filling, poured into an unbaked pie shell and baked in the shell. Or at least that's what it is here. Chiffon? In my world, a chiffon pie is a creamy pie with a cooked filling, but with something folded in to "lighten" it, like a chocolate pudding base with whipped cream folded in. However, Grandma used to differentiate between meringue and a whipped cream topping. Meringue was of egg whites and was baked, chiffon was the creamy topping, so the same lemon pie could be "Lemon Meringue" or "Lemon Chiffon", based only upon what she put on top of it. A plain old chocolate pie with a dollop of whipped cream became so much more elegant when it became chocolate chiffon, and the only difference was that she spread the topping over the whole pie, then cut it, as opposed to a spoonful of topping on the cut piece of pie. I liked "chiffon" better because there was more topping, or at least I thought there was. Is that technically correct? Darned if I know, LOL, but it's what I knew growing up, so if chiffon topping is different than just whipped cream topping, I want to know how to make it too! Annie

My sugar cream pie recipe is similar, but I use Milnot or evaporated milk and I also cook the filling in the microwave until thick, stirring and then add my vanilla to it when done. When it is thick pour it into a baked pie shell. Either put the butter in the pudding part or in pieces on top and I sprinkle it with nutmeg. Then bake in a hot oven just long enough to let the pie filling bubble and become lightly brown. Sugar Cream pie is Indiana's state pie. Sue

It shouldn't be a problem. The butter-making process separates the majority of milk's water components from the fat components. Lactose, being a water soluble molecule, will largely be removed, but will still be present in small quantities in the butter unless it is also fermented to produce cultured butter. Clarified butter, however, contains very little lactose and is safe for most lactose intolerant patients. How much butter is in the recipe? If it's a tablespoon or two, dividing it up by 8 or 12 slices should give less than a teaspoon per serving. I love Coconut Cream Pie.

This recipe is from the Eagle Brand Website.

Calls for just one can of condensed milk so I'm not sure if this is the one that you are looking for or not.

Maybe the other recipe had been doubled?

Crackling Coconut Cream Pie

Crunchy toasted coconut on a cloud of whipped cream tops this favourite of cream pies. Add a hint of mango for a taste of the islands !

Prep Time: 15 minutes plus chilling time
Serving: 6-8
Ingredients:
3 tbsp (45 mL) cornstarch
1/4 tsp (1 mL) salt
1 2/3 cups (400 mL) water
1 can (300 mL) Regular or Low Fat Eagle BrandÃ¯Â¿Â½ sweetened condensed milk
4 egg yolks
1/2 cup (125 mL) sweetened, flaked coconut, toasted
1 tsp (5 mL) vanilla extract
1 (9"/23 cm) frozen deep dish pie shell, baked and cooled
2-3 cups (500-750 mL) whipped cream (optional)
Toasted coconut (optional)
Mango coulis/sauce (optional)
Preparation:

1. Dissolve cornstarch and salt in water; whisk in Eagle Brand, eggs yolks and coconut.
2. Cook over medium heat, stirring constantly until thick and bubbly. Remove from heat; stir in vanilla.
3. Pour filling into baked pie shell; cool. Cover and chill 3-4 hours.
4. Spread whipped cream over top of pie and sprinkle with toasted coconut. Serve pie slices on a bed of mango coulis, if desired.

Note that there is a big difference in can size from the U.S. to Canada for Eaglebrand. Here the can size is now 14 oz (although it was 16 oz in the early 1970s), but in Canada, it is now down to 10 oz!! At least the recipes give the can size, or else we would be in real trouble. I have a recipe from 1970 that calls for a 16 oz can, and so I add two ounces of cream cheese plus a tablespoon of sugar. I've never seen a recipe that called for two cans, however, and so I agree with Ann that it must have been a double recipe.
