Cocoa as surprise ingredient in recipes

A recipe for enchilada sauce suggested some pure cocoa. It added a new and positive dimension to the sauce. Big surprise! Any other innovative uses of cocoa?

I add chocolate to my Tex-Mex Chili.

You can add cocoa to rye bread dough.

I really like these cocoa, mocha recipes! I'd like to create my own peppermint variety since I'm almost out of Starbuck's variety. What would I use to add that peppermint flavour? Crushed candy canes? Peppermint extract? How to add liquid peppermint extract? To the sugar? Sorry to hijack thread but need some ideas. Thanks!

When I taught home ec, this is the recipe we used and it's the only recipe for brownies I ever use. Brownies 1 stick butter 1 cup sugar 1 cup flour 1/4 tsp salt 1/2 tsp baking powder 2 eggs 2 HEAPING TBl cocoa 1 tsp vanilla. Melt butter in a square pyrex baking dish Sift dry ingredients Mix eggs, butter, dry ingredients bake 350 18 minutes You don't test them with a toothpick as these are more fudgie than cake like Cool completely and cut with a plastic knife I sometimes make a glaze with 1/2 c powdered sugar, 1 Tbl softened buter, 1/2 tsp vanilla, 1-2 tsp milk

For party-music50: Here's white chili with my rendition: 1 can chicken broth 1Tbl olive oil 2 boneless chicken breast, chopped ****I buy rotissorie chicken and use breast only shredded. Works great! I like mine shredded vs chopped 1/4 cup or more chopped onion 1 4 oz can green chiles, chopped ***I puree mine with my hand blender WITH juice 1 19 oz can navy beans, undrained 1 tsp garlic powder 1/2 tsp cilantro ***I use instead 2 tsp chili powder 1/2 tsp oregano 1/8 tsp red pepper Saute chicken and onions 4-5 minutes in olive oil **If using rotissorie, saute onions only till translucent Stir in spices, broth, simmer about 15 minutes, then add beans and shredded chicken and simmer 5 more minutes, to get the flavors blended. We love it topped with fritos, shredded cheese, and a dollop of sour cream

John, that's very close to my recipe, but I use hot milk instead of water. My oldest daughter does that too, but she uses coconut milk or almond milk. I love Nutella, it's so bad for me, LOL. LindaC, I used to make a cocoa mix for the girls to give to teachers, it had Coffee Mate in it. It was better than the cocoa mixed available commercially, it was creamier. Probably because of that creamer, LOL. We also made some flavors by using flavored powdered creamer, I remember a caramel and a French Vanilla, at least. No Nestle's Quik, but there's that creamer and it makes a LOT, we used it for gifts remember. HOT COCOA MIX 10 cups dry milk powder 4 3/4 cups softed confectioners sugar 1 3/4 cups unsweetened cocoa powder 1 3/4 cups powdered non dairy creamer Mix all ingredients and put in pint canning jars with pretty tags and ribbons. To make one serving mix 1/3 cup cocoa mix with 3/4 cup of hot water. Top with marshmallows or whipped cream if you like. Merry Christmas! Annie

I like some cocoa in my chili too. I am not such a fan of cocoa powder in rye bread. It tasted bitter and weird to me when I tried it. I do really like spicy chocolate desserts. It's one of those things I liked the first time I tried it. After waiting a respectable period for me to enjoy the chocolate taste, the heat kicks in. I find it all very exciting.

I always put cocoa in my chili too. And coffee.

This year for Christmas, there was some cocoa and chili pepper loose tea in my stocking. It is actually quite good.

It's also used in pumpernickel bread to make it dark.

If any of you have ever eaten at the Cheesecake Factory, you may have been served their very dark brown bread with soup, sald, etc. It's tasty. I'm guessing they add cocoa to that bread. ?
