Engineered wood water damage, can we replace part?

The floor was put down in December '08. It's 5" hickory. The adjuster hasn't been out yet but when I called, they wanted to send a company out to begin drying it out and spray something to prevent mold. She said they would pull up the damaged wood. We have a dehumidifier running now and thought we should wait until the adjuster saw it before tearing any out. Does that matter, or will the adjuster look at the wood that was pulled up?

Mainly, we are concerned that the insurance company will only pay to replace half the floor and then it won't match. Can they match it?

This is the same floor we had problems with right after installation, and Mannington said it was a moisture problem and blew us off. I thought about calling and having that same guy come out so I can show him what moisture damage really looks like.
