Flooring Contractor That Goofed

I hired a tile contractor after checking references on Angies' List. I got estimates and used the John Bridge's tile forum. I made sure the substrate was done properly. I am a sixty year old woman. I even crawled under the house to check the support system. He did an ok job but didn't follow my directions on a couple of things. I didn't make a big deal out of it. After three weeks I noticed several fine cracks in the grout. He came right out but insisted he couldn't have made a mistake. Well, guess what.... he mixed the grout with twice the flex admix than he should. We have proof. He only used one 25 lb. bag of grout on 225 square feet of tile. He used the whole gallon of admixture. We told him he misread the directions for sanded grout. He is going to fix the error. But he still is insisting the manager from the tile shop come to take samples. We were trying to save him the humiliation. I am so frustrated with contractors that won't admit they can make a mistake. It happens. It is a total inconvenience to us. We have to remove several appliances again. I don't trust him to touch them. Can you tell I'm frustrated? He told me I overeducate myself to the point of anxiety....funny. It seems any project we don't do ourselves turns out this way. Am I cursed?
