Braised Red Cabbage

I have a TON left over!

So I admit, I indulged in making something I have not had in forever and really had a craving for. Unfortunately, I made the whole recipe (did I really need to use the whole 4 lb head of cabbage?!?!?!) and now I have enough to feed an army. I served it with a pork rib roast and spaetzle.

Can I freeze some of it? Turn it into something else like soup? Unfortunately, no one else in the family was an excited about it as I was, so it is not going to be met with a lot of enthusiasm no matter what I do with it....
