Ques about aluminum 'handy foil' pans

I'm going to be making a big old pan of cheesy, saucy baked ziti for a friend, and I'll be using one of those big aluminum pans.

I know that tomato based sauces and stuff react with aluminum, so I'm wondering how far ahead can I make this (for baking later) and avoid getting any kind of reaction between the sauce and the aluminum.

I don't plan on freezing it, but I want to make it today or tomorrow and bring it to her and her family on Tuesday.

The pan will be fine for 3 days or less. You may want to use two pans for better support. Ask me how I know this......

I agree with Teresa, use two pans. Yup, I found that out the hard way too...

I've often kept lasagna a couple of day in a disposable aluminum pan without any noticeable effect.

Um--I'd keep it as short as possible. I'm not sure I'm right, but I'd worry about the acidic tomato against the thin aluminum. At the very least, I think you'd be able to taste the metal. Then again, I tend to be a bit suspicious about aluminum in the best of circumstances.

Your potato salad looks delicious! In the past when I have made potato salad for a large group I made it the day before and stored it in aluminum pans in the refrigerator and never thought a thing about it. It tasted fine. A few years ago I started baking my potatoes for salad instead of boiling. The potato salad keeps better and doesn't get "watery." We like our potato salad chunky and the potatoes hold their shape better. Chase, I enjoyed keeping up with your road trip also. I know you had alot of fun!

The cat I have now likes to chew on foil but each is different. My first thought though, is since you don't have problems with it on the table why worry about it until you see if it's an issue? Much also depends on how the cat is trained, its curiosity and such. I use a squirt gun when he goes near where he shouldn't and a harsh NO! or two with it, he gets the idea. After a couple squirts the "NO!" is all that's needed. Another option is put a container of vinegar next to it A flat container with plastic on top with holes poked so the smell will permeate a bit is usually all that's needed. Haven't found a cat yet who likes the smell of vinegar and it will remove odors in the room at the same time.

Along w/ acidic things like buttermilk being a factor, baking powder also contains an acid (tartaric), doesn't it? Check the box ingredients list: I've a hunch there might be citric acid in there too. I also use either waxed paper or parchment to create a barrier between foods and foil when wrapping or covering things for storage, but only if the foil will be in direct contact w/ those foods.

Another who wishes she had used 2 pans on one memnorable occasion.
In fact...I won't ever use those "handy foil disposable pans" again...I buy extra at a the thrift store....and say no need to return the pan....and hope it goes back to the thrift store.
Lasagna that leaks in the oven is awful....not to mention dry....and not looking like lasagna when you dump it into another pan!

Thanks for the reminder about using two... I actually purchased them packaged in twos for that very reason. Yeah, ask me how I know too! lolam
