Ques about aluminum 'handy foil' pans

I'm going to be making a big old pan of cheesy, saucy baked ziti for a friend, and I'll be using one of those big aluminum pans.

I know that tomato based sauces and stuff react with aluminum, so I'm wondering how far ahead can I make this (for baking later) and avoid getting any kind of reaction between the sauce and the aluminum.

I don't plan on freezing it, but I want to make it today or tomorrow and bring it to her and her family on Tuesday.
