Pumpkin Pie \#2 Source: Taste of Homes Light & Tasty Low\-Calorie Pumpkin Pie Pvalue: 2 Servings: 8 Source: WW Recipe Review Board 11\-15\-04 NOTE: I just copied this from the board and sometimes the point value on board posted recipes can be wrong, so please check this out and verify for yourself. At a glance it looks to be about right to me. If I run it thru Master Cook I will post confirmation. If someone else runs it thru Recipe Builder, please do the same. Looks to be a version of "impossible" pie\-\-where you don't have to make a crust but one forms when baking from the RF Bisquick. These are generally easy and moist. 1 egg 2 egg whites 1 can (15oz) solid pumpkin 3/4 c Splenda 1/2 c reduced\-fat biscuit/baking mix 1 t vanilla extract 1 t cinnamon 1/2 t ginger 1/4 t cloves 1 can (12oz) fat\-free evaporated milk 1 cup reduced\-fat whipped topping In a large mixing bowl, combine the egg, egg whites, pumpkin, Splenda, biscuit mix, vanilla and spices until smooth. Gradually stir in evaporated milk. Pour into a 9" pie plate sprayed with nonstick cooking spray. Bake at 350 for 35\-40 minutes. Cool on a wire rack. Serve with whipped topping. Refrigerate leftovers. Servings 8 one piece with 2T topping equals 124 cal, 2 g fat, 3 g fiber 2WWP

I'm not sure about the eating quality of a Lumina, but I bet it's about like a regular Jack O Lantern pumpkin, which is fair. With both of these I'd recommend that you split them in half, scoop out the seeds and lay the halves, face down, on a cookie tray. Then bake until you can easily penetrate them with a fork. Scoop out the flesh and ... you're ready to eat, or use it in recipes. If the flesh is stringy you can run it through a blender or food processor, which will improve the texture. The resulting flesh can be used just like winter squash, for any pumpkin/squash recipe. Below is a link to a thread on winter squash recipes. Ok so I don't have an exact recipe and have only made this twice, once for Thanksgiving last year and once beforehand to make sure it would taste decent. I usually make spanakopita for holidays, and every time my father tells me how in Greece his mother used to make it with pumpkin instead of spinach and why can't I make that. So last year I googled kolokithopita which can either mean zucchini pie or pumpkin pie, read a bunch of recipes, and decided to attempt it. I still prefer spanakopita but if you want to make something with pumpkin that is savory and not sweet here is something to try. Here is an approximation of what I did. Kolokithopita 2 medium size pumpkins 1 medium size onion a couple sprigs of green onion 1/2 can evaporated milk 2 eggs big handful of fresh parsley, chopped 1/2 - 1 pound feta cheese crumbled pepper Filo dough melted butter Preheat oven to 400 Peel and grate pumpkin, sprinkle on some salt and place in colander to drain. Leave it for awhile then squeeze pumpkin with your hands to drain excess water. In a pot add some olive oil and sauté both onions till the white ones are translucent. Add grated/strained pumpkin and cook until you feel pumpkin is done. Add parsley, evaporated milk, feta, and pepper. (This is the point that I taste the mixture to adjust the proportion of feta. I start with 1/2 lb then taste and add till it tastes right to me ) Add two beaten eggs and stir to combine. Brush a 13 x 9 pan with melted butter place 1 sheet of filo in pan. Brush filo with butter add another sheet of filo. Continue for about 6 sheets of filo. (a few more is fine also) Spread pumpkin mixture evenly on top of filo and top with another 6 or so sheets of filo dough. Score the top layers of feta and bake for approx 45 minutes or until filo is crispy and browned.

My friend makes this. She's excellent at improvisation and the notes are what I gleaned from her. It wasn't 'hot' -- the serranos she used may have been milder ones (they do vary). I would not omit them even tho I don't care for chilies. Key to sucess is a flavorful-smelling curry powder. If it doesn't smell delightful, it won't improve with cooking. I found one at World Market (like Cost Less was in Calif.) in a celaphane pkg. that was great. Curried Coconut Chicken - Lyn's fav 4 chicken boneless, skinless breast halves 1 1/2 Tbsp oil 2 Tbsp curry powder 1/2 onion, sliced thinly 2 cloves garlic (opt.) 1 serrano pepper, minced ** 14 oz. can coconut milk 16 oz. can stewed tomato pieces 8 oz. can tomato sauce (omit) 3 Tbsp sugar 4 canned whole yams or sweet potatoes, cut in large pieces * Heat curry powder in oil; add chicken & saute 5 min.; add onion & garlic; saute til limp; stir in coconut milk, tomatoes & sugar. Cover and simmer 30-40 min. adding yam pieces the last 10 min. notes: Lyn omitted tomato sauce & added 6 mini peppers, sliced plus 6 skinny sweet potatoes, large chop. think she used less chicken * if using fresh sweet potaoes, boil just til tender ** if using serrano pepper, add with onion & garlic

Wow, bragu, I haven’t seen mace since I was a kid, and I don’t see it used in recipes anymore either. chloebud, it’s mid-Sep in upstate NY and I went to the farmstand on Sunday hoping to get some sweet corn and expecting the cabbages to be out. Surprisingly, the corn bin was the most full I’ve seen it all year! the small pumpkins were out, but there were no cabbages at all…. instead there were tons of watermelons!!! something they’ve never sold before, and I suspect were trucked in because melons aren’t grown here. :p
