Vegies Frozen or Canned

I just started a diet to take off about 5 lbs+ lbs.

It primarily consists of lots of vegies and protein.

I do fine making fresh vegies a couple times a week but I need to have something easy on hand at those times that I can't get to the store but need the vegie as part of my meal.

Does anyone know of frozen vegies or cans that you would recommend I try? I'm eating broccoli, cauli, zucchini, asparagus and green beans only. I can snack on celery and cucumbers but not alone as part of a meal. I've tried a few frozen vegies and they were rubbery or had texture problems. Maybe I'm cooking them wrong. If anyone has had any success, let me know how you did it. thanks!

Kraftdee~The problem with canned veggies is that they use so much salt. Would you be willing to cook extra veggies when you are doing fresh & freeze part of those so that you will have your own frozen? That way they wouldn't be rubbery & you know they would be the way you like them. Perhaps take them out & freeze them a couple of minutes or so before they are as done as you like them. I wouldn't cook them 100% if I was going to freeze them but just blanche them. Hope this helps. :-)

Have you tried the Glad Steamer Bags? You could have your fresh veggies all chopped in the steamer bags and then just pop them in them in the micro. The times for each veggie is listed right on the bag. They come out perfect everytime. I love them!

I agree with vic01. Freezing is the way to go if you have the freezer space. If you don't, canning is the next best thing. Freezing does affect the texture and makes peppers somewhat mushy, but doesn't affect the taste like canning does. If you are using the frozen chiles in cooking, you shouldn't notice much difference. Canning gives them a vinegary taste, and in my opinion, leaches out a lot of the heat and flavor of the chile. For NM chiles, I roast, then freeze. Peel as you use them. Much better than canned green chile. Jalapenos and Serranos are washed whole, then put in a freezer bag and frozen. Of course, if you let the chiles ripen to red, you can simply dry them (if your climate allows) or dehydrate them and put in a ziplock bag. Keep in a cool and dry place, and they will last virtually forever. When ready to use, snip off the calix and empty the seeds, then throw the pods into boiling water for about 8 minutes to rehydrate. Depending on the thickeness of the skin, you may want to peel or run through a food mill. Dried/rehydrated chiles taste just like fresh.

When freezing vegetables you need to blanch them in boiling water to stop the enzyme actions that cause loss of flavor, texture and color. See link below for more information. FREEZING RAW VEGETABLE JUICE Michigan State University Extension Preserving Food Safely - 01600682 08/03/99 Raw vegetable juice must be blanched to destroy enzyme activity. To do this, simmer juice for two minutes at a minimum of 190Â°F. Start 2 minute timing when the temperature reaches 190Â°F, NOT BEFORE. Pour into freezer containers. The temperature of the produce at the beginning does affect the safety of the end product, so please do thaw them completely before canning. It will also make a difference in how many tomatoes fit in a jar. But once thawed, I would think that cold pack would be OK assuming you process them with the directions for cold pack. I'm sure there will be a textural difference but I don't know how severe it will be. I've canned from frozen before but I used them in sauce. I would think it would be OK for use in soups/stews etc but I would hesitate before using them in a stir fry.

I had a refrigerator that had the icing up issue on the freezer part. I stored all i could in another freezer and put the non worrisome stuff....like breads, nuts, flour etc in picnic coolers. Filled my biggest stock pots with hot water from the tap set in the turned off freezer....left the door open and aimed an electric fan at it.....also filled it with "car washing towels"...or dog towels....whatever.... Defrosted in about 2 hours. Anything in that freezer with the ice cube that didn't melt is just fine....you know the temperature didn't fluctuate much because the ice cube didn't melt.I wouldn't sweat eating anything in there.

thanks, yankandtex and besh. I will try what you suggest. I've never tried the glad steamer bags, will def try.
Still have to come up with something when I'm in a pinch.
What are your favorite frozen vegetable brands?

We so rarely buy frozen but I'd say that probably it is Green Giant. I think my Mom uses the steamer bags. They are really quick. We just never think to buy any when we are at the store. :-)
