Soy Based Cheese

I can't find the thread where Kathy wanted the information on Soy Based Cheese but here it is.

The company is Galaxy Nutrition Foods. I find this at Publix Supermarkets but I'm sure others have it too.

They are called Veggie Slices Cheese Alternative and they come in various flavors. I have tried mozzarella and American flavor and they are both very good. Per slice here is the nutritionals:

40 calories

cholesterol free

3 grams fat

0 saturated fat

2 monosaturated

1 polyunsaturated

Last night I tried the block of Mediunm Cheddar Flavor (Same company) It won the Chefs Award and I can tell you that I had a very difficult time stopping after I got started. It was that good!

Serving size is 1 oz and the nutritionals are the same as far above.

I hope you can find this in your area because it is teriffic!

Well, if you like it, it must be pretty good. I had previously said that I tried the soy based cheddar cheese and was not keen on it. However, last week I had some of the premium extra old cheese, which I dearly love, and have always been able to cope with, although I am lactose intolerant. This was in keeping with the common phenomenom that aged and processed cheeses may not affect many intolerants, so that worked well for me. Last week, though, I had a bad reaction which left my gut tender for a couple of days. I still have a good part of the large wheel I bought. I'll retest, but if it does not work out, I may have to revisit the soy stuff, and hopefully find a brand I like.

Thanks. I guess I'll have to try it. The smoked salmon has already been frozen which is one reason it's turning into dip. Kinda smushy...I don't know what kind it is. It's something my mother got at one of those roadside smokeshops in Port Angeles, WA. I don't know anything about storing smoked fish and it didn't have a label so I put a bunch in the freezer. Terrible, right? But I didn't know when/if it would go bad and we couldn't eat all of it. I just realized I'll have an occasion to feed the frozen stuff to family members--including the fishgiver--on a camping trip (they are proven to eat anything without complaint) instead of trying to pass it off to potentially more epicurean friends so that takes the pressure off. It will not be wasted!

I use various cheeses. My favorites are fontina, monterey jacks, cheddars (sharp especially for us), gouda, edam, gruyere, mozzarella, parmesan, romano, and provolone. I have melted asiago once and it came out okay too. The trick is to make your white sauce first and then add the cheese as the milk warms in small chunks or shred it. Stir contantly and don't whisk it, just easy stirs. Velvety sauce everytime is my experience. If you aren't making a sauce, or adding it to other ingredients, then almost anything will do I would think, but fresh cheeses like goat cheese can separate on you, I've had that happen once. Most cheese have a huge fat content and have salt. The fatter the cheese, usually the easier it melts I would think. We eat a LOT of cheese in our family, but we like it fresh cut or in a sauce best. Cheddar and mozzarella are the basic toppings for pizza or like tuna melts. Our favorite cheeses for macaroni and cheeses when I do it homemade is a mixture. I will do tomato sauces or white sauce based cheese sauces based on what tag ends of cheese, or cheese I need to use are in the fridge. Fontina is a favorite white cheese around here for melting. And, I think I forgot plain swiss in my list. But, baby swiss to nice ripe swiss cheese always tastes good mixed with beef. Try fontina cheese mixed in with ground veal, and don't forget to use feta cheese with lamb!!

Lorraine, I don't know FL well at all, but here in the midwest it's not hard to find, so I'm thinking you can find it too. Do you have any "superstores" nearby? The larger grocery stores here all carry it. Look in their 'health food' or vegetarian section, if they have one. Even most of our normal-sized groceries carry it - and this area isn't exactly a hotbed of vegetarianism! :) Also, check around at any health or nutrition store - we only have 2 in this area but they both carry a nice selection. Finding the same brand you found in Houston may or may not be easy. I've found very few that I like although some of them are ok for some things. Also, if you like to cook you might want to look at cookbooks by Joanne Stepaniak - she has lots of recipes for cheese substitutes that you can make yourself. Not the sliced-cheese kind, but still, a lot of fun to try. Good luck!

First of all their is no such thing as 100% plant based polyurethane foam. At the most its 10 to 15 percent plant based (soy or palm) with rest petrol based. Flexible polyurethane foam is produced from a reaction with these key chemicals, a polyol which can be petrol based or plant based and an isocyanate, adding reacting toluene diisocyanate (TDI) with water. These are mixed together vigorously in high intensity mixers in specific amounts with other ingredients, and the foam reaction begins almost immediately. Bubbles are formed, and the mixture expands. It’s been compared to bread rising. The denser the foam, the more material used to produce it, and the more material there is in the cushion to provide weight support. Additionally higher density foam can be created to have higher resilience, referred to as HR or ultra-cell foam. For a much higher performing foam. It is important to remember, though, that foam surface firmness is independent of foam density. High density foams can be produced to be very soft. Low density foams can be made to be very firm. Therefore, there is no such thing as “hard” or “firm” density. High density foam products generally offer great deal of support, but they can be manufactured to be fairly soft foams. Thus all standard polyurethane foam is petrol based and some is partly plant based polyol, will perform the same, their is no advantage other than environmentally. The only true environmentally safe and high performance foam that will last 10 + years is Latex foam.

naturelle, I bought a different brand in the beginning and it was some woman's name but I can't remember what it was. It was better than no cheese but not nearly as good as the one I am telling you about. So there is a big difference between brands.

So sorry to hear of your laxtose intolerance. Have you tried any of the medication for it?

Unless it's an international brand, I would not find your products anyways, so I'll keep looking by trail and error like you did. Let's face it, it's not like any of them is going to be real bad from what I'm seeing.

I'm eating one of my pizzas, made with the soy mozzarella, and it's very good. As you also found, it is remarkably good. It looks like, melts like. The taste is not 100% like, but perhaps 85%, and mozzarella is not exactly a gastromatic cheese anyways. It doesn't string and is not as chewey.

LI is very prevalent in orientals, because historically dairy has not been in their diet. I used to take the tablets, but since they came out with the Lactaid milk I've been happy with that. If I'm going out for dinner, I pack a couple of the tablets, just in case the dessert is a parphait (sp?) or has whipped cream. I'm going to try making the chocolate pudding posted on the Cooking forum with low fat Lactaid milk.

I did not know that LI was more prevalent in Oriental people. It's also news to me about the lack of dairy in their diet. Pobably the lack of dairy is a good thing. My mother is so LI that the tablets don't even work for her. She has managed to find one kind of milk that she can drink though. Thank goodness I don't have that problem along with all the others I have!
