RECIPE: Prune Cake Recipe Needed

I asked my Mom what she wanted us to cook for Thanksgiving and she said "Prune cake like Mom used to make". My grandmother can't find her recipe (she is 93 years young). There are lots of recipes on the web, but the one Mom remembers is that the prunes were cooked and mashed, you used some of the juice from boiling and most importantly that the icing had prunes in it also.

Does anyone have an old recipe they would share?

This Prune Cakes does not fit the description of what you are looking for, but it is none-the-less delicious!! Thought since you have someone in the family fond of prunes, perhaps you would like it for future use.

Prune Sour Cream Cake
Source: "from the back of Sunsweet Prune box"
1Â½ cups Sunsweet Prunes (use already pitted, soft
prunes)
1 tablespoon grated lemon rind
2 cups sifted flour
1 teaspoon baking powder
1 teaspoon baking soda
Â½ teaspoon salt
1 cup soft butter
1 cup granulated sugar -- * I use Â¾ cup
2 large eggs
1 cup sour cream
1 teaspoon vanilla extract
Â½ cup firmly packed light brown sugar
1 teaspoon cinnamon
Â½ cup chopped English walnuts
Pour boiling water over prunes. Let stand 15 minutes. (Skip this step if using the soft pitted kind.) Drain, pit, and dice prunes. Add lemon and set aside.
Grease and flour 9" tube pan. Sift together flour, baking powder, baking soda, salt; remove 1/4 cup and toss with prunes.
Cream butter and sugar until fluffy. Beat in eggs, one at a time. Slowly beat in flour mixture, alternnately with
sour cream and vanilla, beginning and ending with flour.
Fold in prunes. Combine brown sugar, cinnamon and nuts. Turn 1/3 batter into pan. Sprinkle with 1/3 brown
sugar mixture, repeat layering twice.
Bake at 350Â° F. 55 minutes or until done. Cool in pan on rack for 10 minutes. Remove from pan.

This is from The Boston Cooking School Cook Book 1931

Prune Almond Filling

White Mountain Cream (will list later)
1/2 cup prunes, stoned and cut in pieces
1/3 cup almonds, blanches and cut into pieces
When frosting is ready to spread, add prunes and almonds.

If I remember, my mom and grandma always made boiled frostings

White Mountain Cream Boiled frosting I

1 cup sugar
1/2 cup water
1/2 teaspoon cream of tartar or 1/2 tablespoon lemon juice
1 egg white, beaten until stiff

Put sugar, water, and cream of tartar in pan, stir until sugar is dissolved, and bring to boiling point. Add 3 tablespoons sirup to beaten whites, beating constantly after adding each spoonfull. boil sirup to 240F or until it spins a long thread. Pour gradually on egg white, beating constantly. Flavor as desired.

Years ago, they did not have the prepared stuff and would not use powder sugar. Boy I miss those fluffy frostings.
I checked the book for prune cakes, and it appeared that they did not put prunes into the cake, but only into the frosting. Guess, a person could get too many prunes===
You could also check any German receipes as they use alot of prunes. My friend made a upside prune cake and it was not too sweet, buy very tasty.

I used this recipe for a 25th anniversary cake. Here are a couple of recipes that I have tucked away in my cookbook. I did make marzipan one christmas to make minature fruits for decorating a cookie tray. It worked out well. Don't know about the total yeld, but think you could make a couple of batches.....or adjust the ingredients to suit your purpose. (Bought some marzipan once, but it did not have a good taste, so it was a waste of good money. That is when I decided to make my own!) ALMOND PASTE 100 g blanched almonds 100 g icing sugar egg white 2 ml almond extract Grate the almonds finely and mix with the sieved icing sugar in a bowl. Mix in egg white, little at a time, until you get a soft and kneadable mixture. Add the almond extract and continue kneading with your hands. Wrap the almond paste tightly in plastic. Use it to make candies, to cover cakes or to fill traditional Finnish shrove buns. Almond paste may be coloured and flavoured with food colourings, cocoa powder and various essences and extracts. There is enormous confusion about the difference between what we call "almond paste"and what some confectioners call "marzipan," and candy manuals are not much help. Some would say our recipe is one for marzipan, others would say, that it's almond paste. But whatever name, you can use the paste made by this recipe in pastry and cake fillings, as well as to make small candy shapes that you can tint, using a small brush and food coloring. The advantage of making your own, over most of the versions available in shops is the absence of inexpensive fillers and excessive bitter almond extract that compromise the delicacy of the flavor. Those with nineteenth century leanings might prefer rose water to the almond extract in the recipe. (Nice for wedding or special cakes.) Well wrapped and refrigerated, the paste will keep for many months. .1/2 pound whole, blanched Almonds 2 tablespoons Water (for processing almonds) 1 cup Sugar 1/2 cup Water (for the syrup) 2 tablespoons Light Corn Syrup 1/2 teaspoon Almond Extract, or more to taste Preheat the oven to 250 degrees and spread the blanched almonds on a baking sheet. Bake, stirring frequently, until they are heated through but not browned. While the almonds are still hot, put them into the container of a blender or food processor and grind them as fine as possible, adding the 2 tablespoons water gradually and stopping to scrape down the sides of the container occasionally. When you pinch a bit and feel no coarse grain, the nuts are fine enough. In a small saucepan, combine the sugar, 1/2 cup water, and corn syrup. Boil without stirring until the syrup reaches 235 degrees on a candy thermometer. Remove from heat and stir in the flavoring. Start the blender (or food processor) and add the hot syrup in a thin stream through the feeder opening in the cover. Continue to process until the mixture is uniform. Cool the almond paste and pack it into a jar, or wrap it in plastic, allow it to ripen in the refrigerator for a week or so before using it. (If necessary to soften the almond paste after storage, heat it, wrapped in foil, in a steamer over boiling water, or put it unwrapped in the upper part of a double boiler over boiling water, just until it is pliable enough to use.)

From ehow.com: Add fruit to a cake mix for a new, exciting flavor instead of plain old cake. Be forewarned, however: there is a trick to adding fresh fruit to any cake. It can't be done at any old time. Otherwise you'll end up with a mushy, soggy cake. The fruit muse be carefully added at the last minute. Instructions: Wash the fruit and place on paper towels to dry. While the fruit is drying, mix the cake as directed on the packaging. Allow the cake mix to sit a few minutes to thicken. Pour the cake mix into a prepared cake pan. Place the fruit in sporadic spots in the cake mix. Gently press down on each piece of fruit so it is submerged in cake mix, but don't squish it. Bake the cake as directed on the package. Keep an eye on the cake as it bakes - you may need to adjust the cooking time.

Here is where you can find a layer cake with prune filling.
Just stumbled onto it while searching with Google.

Maybe if you borrow portions of different recipes, you can come somewhat close to what you want to achieve.

Prune Spice Cake
1 cup boiling water
1 cup uncooked prunes, pitted and cut up
2 cups sifted flour
1 1/2 cups sugar
1 teaspoon salt
1 1/4 teaspoons baking soda
1 teaspoon each cinnamon, nutmeg, cloves
1/2 cup oil
3 eggs, unbeaten
1 cup chopped nuts
Pour boiling water over prunes, let stand 2 hours. Sift dry ingredients into large mixing bowl. Add prune mixture, oil, eggs and nuts. Blend thoroughly about 1 minute. Beat 2 minutes at medium speed on mixer.
Pour into a greased and floured 13 x 9 x 2 inch pan. Sprinkle batter with Streusel topping.
Bake in oven 350 degrees 45 to 50 minutes. May also be baked in cupcake lined pans, makes 12 cup cakes. May omit the Streusel topping. Can also be baked in two 9 inch round pans and frosted.
Streusel Topping
Mix 1/2 cup sugar
2 Tablespoons Flour
2 Tablespoons butter or margarine
Mix until crumbly and sprinkle on cake.
