Home Cookin Chapter: Recipes From Thibeault's Table =================================== Buttery Apple Cake Source: Savoring Italy by Michele Scicolone 1/2 cup plus 1 tablespoon unsalted butter 3 Apples (Golden Delicious) peeled, cored, and cut into slices 1/4 inch thick 2/3 cup all-purpose flour 1/2 teaspoon baking powder 1/2 teaspoon salt 2 whole eggs, plus 1 egg yolk 1 teaspoon vanilla extract 1 cups granulated sugar 1/2 teaspoon grated lemon zest confectioners sugar Note: I used Red Delicious Apples . Preheat oven to 375°. Generously butter a 9 inch round cake pan with 2 inch sides. In a large frying pan over low heat, melt the butter. Pour 6 tablespoons of it into a small bowl or cup and set aside. Add the apple slices to the butter remaining in the frying pan and cook, stirring occasionally, until the apples are tender, about 10 minutes. Removed from the heat. In a small bowl, stir together the flour, baking powder, and salt. In a large bowl, beat the whole eggs and egg yolk until blended. Add the 6 tablespoons melted butter, the vanilla, the granulated sugar, and the lemon zest. Stir in the flour mixture and the apples. Spoon into th prepared pan, smoothing the top. Bake until the cake is browned, 30 to 35 minutes. Transfer to a wire rack and let cool in the pan for 5 mintues. Invert the cake ont a plate and lift off the pan, then invet the cake again onto the rack and let cool completely. Just before serving, place confectioners sugar in a small sieve and dust the top of the cake.

Scrape bowl and add rest of banana mixture in two batches, mixing 20 seconds after each addition. Pour into 9"x2" round pan (I just lined the bottom with parchment, no spray or butter) and bake at 350 F for 30 to 40 minutes. Cool for 10 minutes in pan and then turn out onto rack to cool completely. Hint: Use smallest amount of sour cream and 3 bananas for more pronounced banana flavor Cream Cheese Icing Cream cheese, softened 8 oz. Butter, softened 5 TBS (2.5 oz) Sour cream 1 Tbs Vanilla extract 1/2 tsp. Rum 1 Tbs Powdered sugar 1 1/4 C (5 oz) Process (yeah, the food processor) or beat cream cheese, butter, sour cream, and vanilla until smooth. Add powdered sugar and pulse until smooth. Makes enough to frost the top of a 9x13 sheet cake. I used regular flour, because I never have cake flour, and it always comes out great. Annie

Here's one that kinda sounds close: Fruit Cocktail Cake recipe Posted by ginnyo at recipegoldmine.com 6/30/01 3:10:28 pm Cake Batter: 1 1/2 cups granulated sugar 2 cups flour 2 teaspoon baking soda 1 teaspoon salt 2 eggs 1 can fruit cocktail with heavy syrup, undrained 1/2 cup chopped nuts 1/2 cup shredded coconut 1/2 cup packed brown sugar Frosting: 1 1/2 cups granulated sugar 2/3 cup butter 2/3 cup evaporated milk 2 teaspoons vanilla extract Heat oven to 350 degrees F. Mix sugar, flour, baking soda, salt, eggs and the entire can of fruit cocktail including the syrup. Mix until just moistened. You still may have some lumps in it, but don't over-mix. Spread into a greased floured 9 x 12 x 2-inch pan. Mix nuts, coconut and brown sugar. Sprinkle over cake. Bake for 40-45 minutes. Just before the cake is done baking, make the frosting. Mix sugar, butter and evaporated milk in a saucepan. Bring to a boil and add vanilla extract. When the cake is removed from the overn, pour the boiling frosting liquid over the hot cake.
