RECIPE: Mennonite Fruit Dessert

Whenever I am looking for a large dessert to take along to meetings and such, this is the one I always turn to.

Cake layer:

2c all purpose flour

2 tsp baking powder

1c sugar

1/8 tsp salt

1/2 c butter

1c milk

2 beaten eggs

2 tsp vanilla

Fruit layer

fresh or frozen unsweetened fruit of choice-apples, peaches, berries, apricots, plums, etc.

Topping

1/4 c melted butter

3/4 c all purpose flour

3/4 c sugar

Blend flour, baking powder, sugar, salt, and butter in a large bowl. Stir in milk, eggs, and vanilla.Spread in a well greased jelly roll pan (17x11x1"). Cover with fruit of choice. Combine topping ingredients until crumbly. Sprinkle over fruit and bake at 375° for 30-35 minutes.

Yields: 40 squares.
